These French Dip Tortilla Roll Ups are a delightful twist on the classic sandwich, featuring thinly sliced roast beef, melted provolone cheese, and crispy French fried onions wrapped in a warm flour tortilla. Baked to golden perfection and served with a savory au jus dipping sauce, they make for a quick and crowd-pleasing appetizer or meal.

Ingredients

Roll Ups

  • 4 large flour tortillas, about 12 inches in diameter
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions, store-bought or homemade
  • 2 tablespoons extra virgin olive oil

Au Jus

  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat Oven and Prepare Pan: Set the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper to ensure easy release and cleanup.
  2. Assemble Roll Ups: Lay one flour tortilla flat. On half of the tortilla, place 2 slices of provolone cheese, about 3 ounces of roast beef, and a generous handful of French fried onions. Brush the inside edge of the tortilla lightly with olive oil to help seal.
  3. Roll and Arrange: Starting from the filled end, roll the tortilla tightly to enclose the fillings. Press the oiled edge to seal. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and fillings.
  4. Brush with Olive Oil: Lightly brush the tops and sides of each roll with the remaining olive oil to promote a crispy and golden finish during baking.
  5. Bake: Bake the roll ups in the preheated oven for 8 to 10 minutes, rotating the baking sheet halfway through if needed, until the tortillas are golden brown and the cheese is just starting to bubble at the edges.
  6. Prepare Au Jus: While the roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium heat, whisking to blend the ingredients. Let it simmer gently for 3 to 4 minutes until hot and fragrant.
  7. Rest and Slice: Remove the baked roll ups from the oven and let them rest on a wire rack for 2 minutes to allow the cheese to set. Slice each roll into halves or thirds.
  8. Serve: Arrange the sliced roll ups on a platter and serve immediately with the warm au jus for dipping, offering a delicious and flavorful bite.

Notes

  • You can substitute provolone with Swiss or mozzarella for different flavors.
  • Use fresh French bread as a dipper alternative if you prefer.
  • Keep an eye on the roll ups while baking to prevent over-browning.
  • French fried onions add a nice crunch; homemade ones can be prepared by thinly slicing onions and frying until crispy.
  • For a gluten-free version, use gluten-free tortillas and ensure consommé and soy sauce are gluten-free.
