Ingredients

Main Ingredients

  • 1 lb lean ground beef (96/4) or lean ground turkey
  • 1 medium onion, diced
  • 1 (1 oz) packet Low Sodium Ranch Dressing Mix (such as Mrs. Dash)
  • 1 (1 oz) packet Low Sodium Taco Seasoning (such as Mrs. Dash)
  • 1 (32 oz) box low sodium Swanson Chicken Broth
  • 1 (14.5 oz) can tomato sauce (low sodium)
  • 2 (14.5 oz) cans diced tomatoes with chiles
  • 1 (14.5 oz) can black beans, drained (low sodium)
  • 1 can corn, drained (low sodium)
  • Tortilla chips and added cheese for toppings (optional)

Instructions

  1. Cook the beef and onions: In a medium skillet, cook the diced onions and lean ground beef over medium heat until the beef is browned and onions are soft. Drain any excess fat to keep the soup lean.
  2. Combine ingredients in slow cooker: Transfer the cooked ground beef and onion mixture to your slow cooker. Add the ranch dressing mix, taco seasoning, chicken broth, tomato sauce, diced tomatoes with chiles, black beans, and corn. Stir well to combine.
  3. Slow cook the soup: Cook the soup on High for 4 hours or on Low for 6 hours, allowing all the flavors to meld together.
  4. Add toppings before serving: Ladle the soup into bowls and garnish with sour cream, shredded cheddar cheese, and tortilla chips if desired for added texture and flavor.
  5. Instant Pot alternative - sauté beef and onions: Use the Sauté feature on your Instant Pot to cook the ground beef and diced onions until browned. Drain any excess fat.
  6. Instant Pot alternative - pressure cook: Add all remaining ingredients to the Instant Pot after sautéing. Seal the lid and set to Pressure Cook mode for 20 minutes. Allow the pressure to release naturally before opening.
  7. Serve portion size: Serve the soup in 1-cup portions for a well-balanced meal.
