This Viral Trader Joe's Dumpling Bake is a flavorful and comforting dish combining creamy coconut milk, spicy red Thai curry, savory soyaki sauce, fresh spinach, and tender chicken dumplings. Baked to perfection, it's an easy one-dish meal perfect for a quick weeknight dinner or a cozy gathering.

Ingredients

Sauce

  • 1 can coconut milk (14 oz)
  • 1/2 bottle red Thai curry sauce (approximately 7 oz)
  • 3 tbsp soyaki sauce
  • 3 cloves garlic, minced

Other Ingredients

  • Generous amount of fresh spinach (about 3 cups)
  • 1 bag chicken frozen dumplings (approximately 24 dumplings)
  • Chili oil crunch, for topping (to taste)

Instructions

  1. Prepare the sauce: In a baking dish, thoroughly mix together the coconut milk, red Thai curry sauce, soyaki sauce, and minced garlic until well combined to create a flavorful curry base.
  2. Add spinach and dumplings: Spread a generous amount of fresh spinach evenly over the curry mixture. Then, arrange the frozen chicken dumplings in a single layer on top of the spinach.
  3. Bake the dish: Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 350°F (175°C) for 35-40 minutes until the dumplings are cooked through and the sauce is bubbling gently.
  4. Finish and serve: Remove the foil, top the bake with chili oil crunch to add a spicy, crunchy texture, and serve warm for a delicious, satisfying meal.

Notes

  • You can substitute spinach with kale or other leafy greens if preferred.
  • Adjust the amount of red Thai curry and soyaki to your desired spice and flavor level.
  • Chili oil crunch adds heat and texture but can be omitted for a milder dish.
  • If you prefer crispier dumplings, remove the foil during the last 5-10 minutes of baking.
  • Ensure dumplings are cooked thoroughly by checking that they are heated through and no longer frozen in the center.
