A vibrant and healthy Veggie Wrap with creamy hummus and a colorful mix of fresh vegetables, perfect for a quick and nutritious meal or snack. This easy-to-make wrap offers a delicious combination of textures and flavors, enhanced by a splash of lemon juice and a sprinkle of everything bagel seasoning.

Ingredients

Wrap Ingredients

  • 4 tortilla shells (burrito-sized, any variety)
  • 1/2 cup hummus
  • 1 cup spinach (baby spinach recommended)

Vegetable Filling

  • 1 yellow bell pepper, cut into strips
  • 1/2 cucumber, cut into matchsticks
  • 1/2 cup carrots, grated
  • 1/2 cup beets, grated
  • 1/4 cup red onion, cut into strips

Additional Flavorings

  • 1/2 lemon, cut into wedges
  • 4 teaspoons extra-virgin olive oil
  • 4 teaspoons everything bagel seasoning

Instructions

  1. Prepare the Tortillas: Lay all tortillas out flat on a clean surface. Spread 2 tablespoons of hummus evenly on each tortilla. Then place 1/4 cup baby spinach on top of the hummus, arranging the leaves flat and leaving a border around the edges to facilitate wrapping.
  2. Add the Vegetables and Seasoning: On one half of each tortilla, about an inch from the edge, layer the yellow bell pepper strips, cucumber matchsticks, grated carrots, grated beets, and red onion strips evenly among the wraps. Squeeze fresh lemon juice over the vegetables, drizzle with 1 teaspoon of extra-virgin olive oil per wrap, and sprinkle on everything bagel seasoning.
  3. Roll the Wraps: Starting from the side with the vegetables, fold the empty border over the filling. Then carefully pull the filling in tightly and tuck the edge underneath to secure the wrap, creating a bundled and neat package.
  4. Wrap and Store: Wrap each completed veggie wrap tightly in waxed paper or parchment. Refrigerate until ready to eat. The wraps can be stored in the refrigerator for 4 to 5 days for freshness.

Notes

  • Use any variety of tortilla shells based on dietary preferences (whole wheat, gluten-free, or spinach tortillas work well).
  • For added protein, consider adding grilled tofu or chickpeas.
  • The wraps are best consumed within 4-5 days when stored properly in the refrigerator.
  • Feel free to customize the vegetable mix according to seasonal availability or personal taste.
  • If packing for lunch, keep the lemon and olive oil separate until just before eating to maintain freshness.
