A quick and refreshing Tuna & White Bean Salad that's perfect for a light lunch or a nutritious side dish. Combining creamy white beans, protein-packed tuna, and the fresh bite of green onions, dressed simply with olive oil and lemon juice, this salad comes together in just 10 minutes.

Ingredients

Salad Ingredients

  • 1 15 oz. can white beans, drained and rinsed
  • 1 5 oz. can chunk light tuna in water, drained
  • 2 whole green onions, thinly sliced
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Beans and Tuna: Pour the can of white beans into a colander and rinse under cool water. Allow the excess water to drain completely. Drain the can of chunk light tuna thoroughly to avoid excess moisture. Combine the drained beans and tuna in a large mixing bowl.
  2. Add the Green Onions: Thinly slice the green onions and add them to the bowl with the beans and tuna, evenly distributing for fresh flavor throughout the salad.
  3. Dress the Salad: Pour in 1 tablespoon of olive oil and 1 tablespoon of fresh lemon juice. Sprinkle a light amount of salt and freshly ground black pepper over the ingredients. Stir gently but thoroughly to combine all elements evenly, ensuring the dressing coats the beans and tuna.
  4. Adjust Seasoning: Taste the salad and adjust seasoning as needed, adding more salt, pepper, or lemon juice to suit your personal preferences. Toss once more before serving.

Notes

  • Use canned white beans such as cannellini or navy beans for best texture.
  • For a zestier flavor, substitute lemon juice with lime juice or add a bit of red wine vinegar.
  • Serve chilled or at room temperature for best flavor.
  • Add chopped fresh herbs like parsley or dill for extra freshness.
  • This salad can be served alone or over a bed of greens for a heartier meal.
