Ingredients

Shrimp and Marinade

  • 1 pound shrimp (peeled and deveined)
  • 1/8 tsp crushed red pepper
  • 1/4 cup lemon juice

Sauce and Seasoning

  • 1 Tbs coconut oil (melted)
  • 3-4 Tbs chopped garlic (about 1 small bulb)
  • 1/2 cup canned coconut cream or thick coconut milk (without preservatives)
  • 2 tsp dried parsley or 1 Tbs fresh chopped parsley
  • 3 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  1. Prepare the garlic and spices: In a large frying pan, warm the melted coconut oil over medium heat. Add the chopped garlic and crushed red pepper, cooking for about 3 minutes while stirring frequently until the garlic becomes fragrant.
  2. Add the shrimp and seasonings: Place the shrimp into the pan with the garlic mixture. Pour in the coconut cream or thick coconut milk, then sprinkle the dried or fresh parsley, paprika, salt, and black pepper. Finally, add the lemon juice for brightness.
  3. Cook the shrimp: Allow the shrimp to cook for 2-3 minutes on each side until they turn pink and are fully cooked through. Be careful not to overcook to keep the shrimp tender and juicy.
  4. Thicken the sauce and finish: Remove the shrimp from the pan temporarily and let the sauce simmer for a few extra minutes to thicken slightly. Return the shrimp to the pan and stir to coat them evenly in the rich sauce before serving.

Notes

  • Ensure to use thick canned coconut cream or coconut milk without preservatives for best sauce consistency.
  • Do not overcook shrimp to avoid a tough texture; shrimp cook quickly and are done when pink and opaque.
  • Adjust crushed red pepper to taste depending on desired spice level.
  • Fresh parsley can be used instead of dried for a brighter flavor, using about 1 tablespoon.
