Ingredients

Shrimp

  • 1 tbsp olive oil
  • 1 lb medium to large shrimp, peeled and deveined

Teriyaki Sauce

  • 1/4 cup low-sodium soy sauce
  • 2 tbsp water
  • 2 tbsp light brown sugar
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 green onion, diced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp water (for slurry)
  • 1 tbsp cornstarch

Instructions

  1. Prepare Teriyaki Sauce: In a small bowl, combine soy sauce, 2 tablespoons water, light brown sugar, honey, rice vinegar, sesame oil, minced garlic, grated ginger, diced green onion, and toasted sesame seeds. Mix until well blended to create the teriyaki sauce base.
  2. Cook Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp and cook for 1-2 minutes on each side, or until the shrimp turn pink and are cooked through. Remove shrimp from the skillet, setting them aside on a plate.
  3. Simmer Sauce: Pour the prepared teriyaki sauce mixture into the same skillet and bring to a boil over medium-high heat, scraping any browned bits from the pan to enhance flavor.
  4. Thicken Sauce: In a small bowl, whisk together 1 tablespoon water and cornstarch until smooth to form a slurry. Slowly add this slurry to the boiling sauce, stirring constantly. Let it simmer for 1-2 minutes until the sauce thickens to a glaze-like consistency.
  5. Combine and Serve: Return the cooked shrimp to the skillet, tossing them in the thickened teriyaki sauce to coat evenly. Serve immediately over rice and your favorite steamed or sautéed vegetables if desired.

Notes

  • For extra flavor, marinate the shrimp in half of the prepared teriyaki sauce for 10 minutes before cooking.
  • Adjust sweetness by adding more or less honey and brown sugar according to taste.
  • Use gluten-free soy sauce to make this recipe gluten-free.
  • Serve with steamed broccoli or snap peas for a balanced meal.
  • The cornstarch slurry is essential to thicken the sauce into a glaze; do not skip this step.
