Ingredients

Sweet Potatoes

  • 2 medium/large sweet potatoes, cubed
  • 2 teaspoons olive or avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ⅛ teaspoon black pepper

Ground Beef

  • 1 pound lean ground beef (90/10 preferred)
  • 2-3 tablespoons taco seasoning, adjust to taste
  • 2 tablespoons water, if needed

Toppings

  • 1 cup cottage cheese (preferably good culture)
  • 1 avocado, chopped
  • 4 teaspoons hot honey
  • Hot sauce, to taste
  • Pickled onions and/or hot and sweet jalapeños, for garnish

Instructions

  1. Preheat and roast sweet potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the cubed sweet potatoes with olive or avocado oil, sea salt, black pepper, and garlic powder until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet. Roast in the oven for 20 minutes, flipping halfway through to ensure even cooking and browning. Alternatively, you can use an air fryer to cook the sweet potatoes.
  2. Cook the ground beef: While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef and use a spatula to break it apart as it cooks. Brown the beef thoroughly, cooking for about 6-7 minutes until no longer pink. Stir in taco seasoning, and if the mixture seems too dry, add 2 tablespoons of water to create extra moisture. Cook for another minute to blend flavors.
  3. Assemble the bowls: Once the sweet potatoes are roasted, divide them evenly among four serving bowls. Top each portion with a generous amount of the cooked ground beef. Spoon cottage cheese over each bowl to add creaminess and balance.
  4. Add toppings and serve: Garnish each bowl with chopped avocado, a drizzle of hot honey, and a splash of hot sauce to taste. Finish with pickled onions and/or hot and sweet jalapeños for added texture and flavor. Serve immediately and enjoy your flavorful, nutritious bowl.

Notes

  • Adjust taco seasoning amount to your spice preference.
  • You can use an air fryer for roasting sweet potatoes if preferred.
  • Choose full-fat or low-fat cottage cheese based on dietary needs.
  • Use fresh jalapeños if pickled are not available, but pickled add a nice tang.
  • Hot honey can be substituted with regular honey if you prefer less heat.
