Ingredients

Main Ingredients

  • 1 kg Sweet potatoes (peeled and chopped into chunks)
  • 400 g Chickpeas (drained and rinsed)
  • 400 g Coconut milk (reduced fat or regular)
  • 400 g Tinned chopped tomatoes
  • 1 Onion (peeled and chopped)
  • 150 g Crunchy peanut butter
  • 3 Garlic cloves (peeled and chopped)

Spices & Flavorings

  • 3 tsp Ground ginger
  • 3 tsp Ground cumin
  • 1 tsp Ground coriander (optional)
  • 1/2 tsp Chilli flakes (optional)
  • 3 tbsp Tomato purée (tomato paste)

Instructions

  1. Combine Ingredients: Put all of the ingredients into the slow cooker and stir well to mix the sweet potatoes, chickpeas, coconut milk, chopped tomatoes, onion, peanut butter, garlic, spices, and tomato purée together evenly.
  2. Cook the Stew: Cook on HIGH for 4 hours or LOW for 6 hours. This slow cooking process allows the flavors to meld beautifully while the sweet potatoes become tender and the peanut butter enriches the stew with a creamy texture.
  3. Serve: After cooking, stir the stew well to combine any settled ingredients and serve hot for a delicious, vegan-friendly meal.

Notes

  • You can adjust the chili flakes according to your spice preference or omit them for a milder flavor.
  • If you prefer a smoother texture, use smooth peanut butter instead of crunchy.
  • The stew can be served with rice or crusty bread to make a more substantial meal.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month.
  • Using reduced-fat coconut milk lowers the fat content slightly but does not sacrifice creaminess.
