  • ½ cup (100 g) granulated sugar
  • 2 eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups (420 g) all-purpose flour
  • 1 ¼ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (6 oz. or 170 g) chocolate chips or chunks (plus more for topping)

Fillings & Toppings (Choose your favorites)

  • Oreos, M&M’s, any kind of chocolate or candy bar
  • White chocolate, peanut butter cups, peanut butter
  • Nuts, peanuts, soft caramels, caramel sauce, dulce de leche
  • Milk chocolate, marshmallows, Nutella
  • Additional chocolate chips, colored sprinkles (for rolling dough balls)
  • M&M's, chopped chocolate, chopped nuts, sea salt flakes, peanuts, chopped Oreos, chopped pretzels
  • Melted chocolate for drizzling

Instructions

  1. Cream the Butter and Sugars: In a large mixing bowl, use a stand mixer with the paddle attachment or a hand mixer to cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add Eggs and Vanilla: Incorporate the eggs one at a time, followed by the vanilla extract, mixing until combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Combine Dry and Wet Mixtures: Slowly add the dry ingredients to the wet mixture, beating on low speed until just incorporated. Scrape down the sides of the bowl to ensure even mixing. Stir in the chocolate chips.
  5. Chill the Dough: Cover the dough tightly with plastic wrap and chill in the refrigerator for 1 to 2 hours until it firms up and is no longer sticky.
  6. Prepare Fillings & Shape Cookies: Flatten about 2 tablespoons of chilled dough in your palm, place your chosen fillings in the center, then carefully wrap the dough around the filling, forming a smooth ball. Press additional chocolate chips or toppings onto the surface.
  7. Chill Dough Balls Thoroughly: Place the shaped dough balls on a parchment-lined baking sheet, cover, and refrigerate ideally overnight until the dough is hard.
  8. Preheat Oven and Bake: Preheat your oven to 350°F (175°C). Arrange chilled dough balls on a parchment-lined baking tray, spacing them well apart. Bake for 12 to 15 minutes, until the cookies have risen in the center and begin losing their shine but are not overbaked.
  9. Cool and Decorate: Remove cookies from oven and allow them to cool completely on the tray. Optionally, drizzle melted chocolate over the cooled cookies and sprinkle with nuts, Oreo crumbs, or colored sprinkles.
  10. Store Properly: Store the stuffed cookies in an airtight container at room temperature or refrigerate for up to 5 days to maintain freshness.

Notes

  • Chilling the dough and shaped dough balls is essential to prevent spreading and maintain the stuffed center.
  • Feel free to customize fillings with your favorite candies, chocolates, or spreads for unique flavors.
  • A stand mixer with a paddle attachment makes mixing dough easier but is not required.
  • Do not overbake cookies; they should be slightly soft in the center once cooled for the best texture.
  • To add a festive touch, roll dough balls in colored sprinkles or press toppings onto cookies before baking.
