This classic Strawberry Pie recipe features a flaky baked pie crust filled with a luscious, homemade strawberry filling made from fresh strawberries, sugar, and a cornstarch-thickened strawberry sauce. The pie is chilled until fully set, delivering a refreshing, sweet treat perfect for dessert or special occasions.

Ingredients

Pie Crust

  • 1 prepared pie crust (baked as directed or homemade)

Strawberry Filling

  • 2 pounds fresh strawberries, hulled and quartered
  • 3/4 cup granulated sugar
  • 3/4 cup strawberry juice (from macerated strawberries)
  • 1/4 cup water
  • 3 tablespoons cornstarch

Instructions

  1. Prepare Pie Crust: Bake the prepared pie crust according to package instructions or your homemade pie crust recipe until golden and fully cooked. Allow it to cool while preparing the filling.
  2. Macerate Strawberries: In a large bowl, combine the hulled and quartered strawberries with the sugar. Let this mixture sit at room temperature for about 20 minutes, during which the strawberries will soften, the sugar will dissolve, and approximately 3/4 cup of strawberry juice will be released. Strain the liquid from the strawberries into a measuring cup.
  3. Prepare Strawberry Liquid: Add water to the strained strawberry juice to bring the total liquid volume to 1 cup. Set the macerated strawberries aside.
  4. Cook Strawberry Sauce: Whisk the cornstarch into the prepared strawberry liquid until smooth. Pour this mixture into a small saucepan and add about 1/4 cup of the macerated strawberries to the pot. Using a potato masher or spatula, gently break these strawberries into smaller pieces. Heat the mixture over medium-high heat, stirring constantly, for 8 to 10 minutes until it thickens to a jam-like consistency.
  5. Combine Filling: Remove the thickened strawberry sauce from heat. Pour it over the remaining strawberries and toss gently to combine, ensuring the filling is evenly coated with the thickened sauce.
  6. Assemble and Chill: Spoon the strawberry filling into the baked pie crust, spreading it evenly and flattening the top gently with a spatula. Refrigerate the assembled pie for at least 4 hours or until completely set before serving.

Notes

  • The pie filling needs time to chill and set properly, so plan ahead.
  • Macerating the strawberries enhances their flavor and sweetness naturally.
  • You can use a homemade or store-bought pie crust based on your preference.
  • For an extra touch, serve with whipped cream or vanilla ice cream.
  • Ensure constant stirring during cooking to avoid lumps in the filling.
