Ingredients

Dressing

  • ½ cup Mayonnaise
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons White Wine Vinegar
  • 2 tablespoons Maple Syrup
  • Salt and Pepper (to taste)

Chicken

  • 2 large Chicken Breasts
  • 2 tablespoons Extra Virgin Olive Oil
  • Salt and Pepper

Salad

  • 312 grams Spring Mix Lettuce
  • 1 cup Fresh Strawberries (sliced)
  • 1 cup Goat Cheese (crumbled)
  • 1 cup Cucumber (diced)
  • ½ medium Red Onion (diced)
  • ½ cup Pumpkin Seeds
  • ¼ cup Hemp Hearts

Instructions

  1. Make the Creamy Dijon Dressing: In a medium jar or small bowl, combine mayonnaise, extra virgin olive oil, dijon mustard, white wine vinegar, maple syrup, salt, and pepper. Shake or whisk thoroughly until the dressing is smooth and creamy with no lumps.
  2. Season the Chicken: Pat the chicken breasts dry, then season evenly with salt and pepper on both sides to taste.
  3. Cook the Chicken: Heat 2 tablespoons of extra virgin olive oil in a small frying pan over medium heat. Add the chicken breasts and cook for 15-20 minutes, flipping regularly to ensure even cooking. Cook until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center.
  4. Prepare the Chicken: Remove the cooked chicken from the pan and let it rest for a few minutes to retain juices. Then dice into approximately 1-inch cubes and set aside.
  5. Assemble the Salad: On a large serving platter or in a large salad bowl, place the spring mix lettuce as the base. Layer the diced chicken, sliced strawberries, crumbled goat cheese, diced cucumber, diced red onion, pumpkin seeds, and hemp hearts evenly on top of the lettuce.
  6. Add Dressing and Serve: Drizzle the creamy Dijon dressing over the salad before serving, or serve the dressing on the side to allow each person to add their preferred amount.

Notes

  • Ensure the chicken is cooked to an internal temperature of 165°F to ensure safety.
  • You can prepare the dressing in advance and refrigerate to save time.
  • For added crunch, lightly toast the pumpkin seeds before adding.
  • The dressing can be served on the side if preferred to prevent the salad from becoming soggy.
