This Strawberry Crisp recipe offers a delightful balance of sweet, tender strawberries topped with a buttery, crumbly oat mixture baked to golden perfection. Easy to prepare and perfect for warm weather, this dessert combines fresh fruit with a crunchy topping for a comforting and crowd-pleasing treat that can be served warm with ice cream or whipped cream.

Ingredients

Filling

  • 2 lbs fresh strawberries
  • 1.87 oz brown sugar (¼ cup)
  • 3 TBSP all-purpose flour
  • 2 TBSP frozen orange juice concentrate (can substitute orange juice)
  • 1 TBSP cornstarch
  • ¼ tsp ground cinnamon
  • ¼ tsp salt

Crisp Topping

  • 2.5 oz old fashioned rolled oats (¾ cup)
  • 3.18 oz all-purpose flour (¾ cup)
  • 1.87 oz brown sugar (¼ cup)
  • 3 oz unsalted butter (6 TBSP, can use salted or unsalted)

Instructions

  1. Preheat oven: Preheat your oven to 375° F (190° C) to prepare for baking the dessert.
  2. Prepare strawberries: Wash and pat dry the strawberries, then remove stems. Pulse in a food processor for 10-20 seconds until broken down but still chunky, or chop finely if no food processor is available.
  3. Mix filling: In a large bowl, combine the prepared strawberries with ¼ cup brown sugar, 3 tablespoons flour, orange juice concentrate, cornstarch, cinnamon, and salt. Mix well to evenly coat the fruit.
  4. Fill baking dish: Pour the strawberry mixture into an 8x8 inch baking dish and spread it evenly to form the base layer.
  5. Prepare crisp topping: In another large bowl, combine rolled oats, ¾ cup flour, ¼ cup brown sugar, and butter. Use your hands to toss and rub the mixture, breaking down the butter to create a crumbly texture.
  6. Top strawberries: Sprinkle the oat mixture evenly over the strawberry layer in the baking dish.
  7. Bake crisp: Bake in the preheated oven for 30 minutes until the topping is golden and the filling bubbly. Optionally, broil for 1-2 minutes to brown the top further.
  8. Cool and serve: Let the crisp cool for 15-20 minutes before serving warm. Enjoy with whipped cream or vanilla ice cream if desired.
  9. Store leftovers: Refrigerate any leftovers for up to 3 days. Reheat before serving for best taste.

Notes

  • Using frozen orange juice concentrate enhances the citrus flavor, but fresh orange juice can be substituted.
  • Broiling at the end adds a lovely golden crunch to the topping—keep a close eye to prevent burning.
  • This dessert is best served warm with whipped cream or ice cream for added richness.
  • Leftovers should be stored covered in the refrigerator and reheated gently before serving.
