Ingredients

Crumbles

  • 60 grams (6 tablespoons) all-purpose flour, dip and sweep
  • 60 grams (¼ cup and 1 tablespoon) granulated sugar
  • 42 grams (3 tablespoons) unsalted butter, melted

Cream Cheese Filling

  • 170 grams (6 oz) cream cheese
  • 30 grams (2 tablespoons) granulated sugar
  • ½ teaspoon pure vanilla extract

Muffin Batter

  • 235 grams (1 and 2/3 cups) all-purpose flour, dip and sweep
  • 2 and ½ teaspoons baking powder
  • 2 large eggs, room temperature
  • 105 grams (½ cup) granulated sugar
  • 115 grams (½ cup) unsalted butter, melted
  • 120 grams (½ cup) milk, room temperature
  • 1 teaspoon pure vanilla extract
  • 180 grams (1 cup) strawberries, chopped into small pieces

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin pan with non-stick paper liners and set aside.
  2. Make Crumbles: In a small-to-medium bowl, combine the flour and sugar and stir with a fork. Pour the melted butter over the mixture and stir until crumbs form. If your kitchen is warm, refrigerate the crumble mixture to keep it firm.
  3. Prepare Cream Cheese Filling: In a medium bowl, stir together the cream cheese, sugar, and vanilla extract until smooth and combined. Set aside for later use.
  4. Mix Dry Ingredients for Muffins: Whisk the flour and baking powder together in a medium bowl and set aside.
  5. Prepare Wet Ingredients: In another bowl, whisk eggs and sugar together briskly until combined, about 20 seconds. Add melted butter, milk, and vanilla extract and mix well.
  6. Combine Batter: Pour the wet mixture into the dry ingredients and whisk gently until mostly smooth with just a few flour streaks remaining.
  7. Fold in Strawberries: Carefully fold the chopped strawberries into the batter using a spoon, ensuring even distribution without overmixing.
  8. Set Aside Batter Portion: Reserve about 6 tablespoons of the muffin batter for layering later.
  9. Fill Muffin Cups: Divide the remaining muffin batter evenly among the 12 lined muffin cups, roughly 2 ½ tablespoons per cup.
  10. Create Cream Cheese Filling Well: Using a spoon, spread the batter slightly to the edges to make a shallow well in the center of each muffin cup. The batter is not thick, so the hole will be subtle.
  11. Add Cream Cheese Filling: Spoon about 2 teaspoons of the prepared cream cheese filling into the center of each batter-filled muffin cup. Gently press the filling down to secure it.
  12. Top with Reserved Batter: Spoon approximately ½ tablespoon of the reserved muffin batter over the cream cheese filling and spread gently with a spoon to cover.
  13. Add Crumble Topping: Sprinkle the crumble mixture generously over the tops of each muffin.
  14. Bake: Place the muffin pan in the oven and bake for about 22 minutes, or until the muffin tops are golden brown and the crumble is lightly browned.
  15. Cool Muffins: Let the muffins cool in the pan for 10 minutes. Then carefully remove them using a small spatula or knife and transfer to a wire rack. Allow to cool completely for at least 25 minutes before serving.

Notes

  • Ensure all ingredients like eggs and milk are at room temperature for best mixing results.
  • If working in a warm kitchen, refrigerate the crumb topping to keep the butter from melting too soon.
  • Do not overmix the muffin batter once wet and dry ingredients are combined to keep muffins tender.
  • You can swap granulated sugar for light brown sugar in the crumble for a richer flavor.
  • These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for 2 days or refrigerated for up to 5 days.
  • Reheat muffins briefly in a microwave or toaster oven for a freshly-baked taste.
