Ingredients

Chicken Filling

  • 1 tablespoon olive oil
  • 8 ounces cooked chicken (shredded or cubed)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup frozen corn kernels
  • 1 jalapeno, chopped
  • 1 cup canned black beans, drained and rinsed
  • ¼ cup green onions, chopped
  • ¼ cup cilantro, chopped
  • 4 cups fresh spinach
  • 1 cup roasted red peppers, roughly chopped

Creamy Spread

  • 1 cup low-fat sour cream
  • ½ cup blue cheese, crumbled
  • Juice from ½ lime

Wrap Assembly

  • 7 Flatout flatbreads
  • 1 cup Monterey Jack cheese, shredded

Instructions

  1. Heat and Spice the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the cooked chicken along with cumin, chili powder, garlic powder, and onion powder. Stir well to coat the chicken evenly with the spices and cook for 1 to 2 minutes until warmed through.
  2. Add Vegetables: Stir in the corn, black beans, green onions, and cilantro. Cook for an additional minute until the mixture is heated through.
  3. Cook Spinach and Peppers: Add the fresh spinach and roasted red peppers to the skillet. Cook for a couple more minutes until the spinach has wilted down. Remove the skillet from heat.
  4. Prepare the Creamy Spread: In a small bowl, whisk together the low-fat sour cream, crumbled blue cheese, and lime juice until smooth and well combined.
  5. Assemble the Wraps: Lay out a Flatout flatbread and spread about 2 tablespoons of the blue cheese sour cream mixture evenly across it. Add approximately ¼ cup of the chicken and vegetable mixture on top and spread evenly. Sprinkle with shredded Monterey Jack cheese.
  6. Roll and Serve: Carefully roll the flatbread to form a wrap. Cut each wrap in half if desired and serve immediately while warm.

Notes

  • For a spicier wrap, add extra jalapeno or a pinch of cayenne pepper to the chicken mixture.
  • You can substitute chicken breast with turkey or tofu for a variation.
  • Use gluten-free flatbreads if you need a gluten-free option.
  • These wraps can be prepared ahead of time and refrigerated; warm them briefly in a skillet or microwave before serving.
  • To make it vegetarian, omit the chicken and add more beans or roasted vegetables.
