Ingredients

Roasted Sweet Potatoes

  • 4 large organic sweet potatoes, peeled and cubed
  • 2-3 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Casserole Filling

  • 1/2 cup almond milk (or whole milk or favorite plant-based milk)
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups marshmallows

Topping

  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper. This will ensure your sweet potatoes cook evenly and don’t stick.
  2. Season Sweet Potatoes: In a mixing bowl, combine the peeled and cubed sweet potatoes with extra virgin olive oil, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground nutmeg. Toss gently until all pieces are fully coated with the spices and oil.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 50-60 minutes or until tender, golden, and slightly charred. Remove from the oven and allow to cool slightly.
  4. Preheat for Casserole: Reduce the oven temperature to 375°F (190°C) and lightly grease a large 9x13-inch baking dish to prevent sticking.
  5. Mix Casserole Filling: In a large bowl, combine the roasted sweet potatoes with almond milk, vanilla extract, organic brown sugar, 1/4 cup maple syrup, 1 teaspoon cinnamon, 1/8 teaspoon nutmeg, a pinch of allspice, soaked and drained raisins, and 2 cups marshmallows. Stir carefully, allowing some sweet potatoes to mash while keeping some chunks for texture.
  6. Assemble Casserole: Transfer the mixture evenly into the prepared baking dish. Distribute the cubed unsalted butter pieces throughout the casserole mixture. Tuck a few extra marshmallows gently into the mixture for added gooeyness.
  7. Prepare Topping: In a separate bowl, mix raw pecans with 1/4 cup pure maple syrup until the pecans are well-coated.
  8. Add Topping: Evenly spread the pecan and maple syrup mixture over the top of the casserole, ensuring full coverage. Cover the dish loosely with foil.
  9. Bake Covered: Bake the casserole covered with foil in the preheated oven at 375°F for 15 minutes to meld flavors and begin melting the marshmallows gently beneath the topping.
  10. Bake Uncovered to Finish: Remove the foil and continue baking for another 15 minutes or until the topping is golden brown and the marshmallows are melted and slightly toasted.
  11. Cool and Serve: Remove the casserole from the oven and allow it to cool slightly before serving. This helps the casserole set and enhances the flavors.
  12. Enjoy: Serve warm as a delightful side dish with your favorite main dishes, perfect for festive occasions or comforting family dinners.

Notes

  • For the raisins, soaking them beforehand (in warm water or a bit of juice) plumps them up and prevents them from drawing moisture out of the casserole.
  • You can substitute almond milk with whole milk or any preferred plant-based milk based on dietary needs.
  • Adjust sweetness by varying the amount of brown sugar and maple syrup according to taste preferences.
  • Ensure sweet potatoes are roasted until tender for the best texture in the casserole.
  • Use raw pecans for a fresh, crunchy topping; toasting them slightly before mixing with maple syrup can enhance flavor.
