Indulge in this irresistible S'mores Pizookie recipe—a gooey, warm cookie skillet dessert that combines the classic flavors of s'mores with a soft, thick cookie dough base. Perfectly baked until the edges are golden and the center remains delightfully gooey, this treat is layered with chunks of graham crackers, Hershey’s chocolate, and marshmallows, making it a cozy, crowd-pleasing dessert for any occasion.

Ingredients

Cookie Dough

  • 1 (113 grams) stick unsalted butter, melted
  • 1/3 cup (67 grams) granulated sugar
  • 1/3 cup (67 grams) lightly packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg plus 1 egg yolk
  • 1 1/4 cups (159 grams) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 3/4 cup (127 grams) semisweet chocolate chips

Filling and Topping

  • 2 Graham crackers, broken into large pieces
  • 1 Hershey’s bar, broken into large pieces
  • 4 marshmallows, cut in half

Instructions

  1. Preheat and prepare pans: Preheat your oven to 400°F (204°C). Lightly spray two 6-inch pie plates or cast iron baking dishes with nonstick cooking spray to prevent sticking.
  2. Make the dough: In a large bowl, stir together the melted butter, granulated sugar, and light brown sugar with a rubber spatula until well combined. Let the mixture stand for 5 minutes. Then, stir in the egg and vanilla extract until fully incorporated. Add the all-purpose flour, baking soda, and fine sea salt, mixing until just combined. Fold in the semisweet chocolate chips gently into the dough.
  3. Assemble the pizookie: Divide the cookie dough into four equal portions. Press two of the dough pieces evenly into the bottom of each prepared pan. Distribute the broken graham crackers, Hershey’s chocolate pieces, and halved marshmallows evenly over the dough layers in the pans. Flatten the remaining two dough pieces and press them over the marshmallow layer to seal the filling inside.
  4. Bake: Place the pans in the preheated oven and bake for about 15 minutes, or until the edges are lightly browned and the inside remains soft and gooey.
  5. Cool and serve: Remove the pizookies from the oven and let them cool for five minutes before serving to allow the filling to set slightly while remaining warm and melty.

Notes

  • For a more rustic presentation, feel free to use a cast iron skillet instead of pie plates.
  • Ensure not to overbake to keep the center gooey and soft.
  • Serve warm for the best texture and flavor experience.
  • Use quality chocolate and fresh marshmallows for optimal taste.
  • Can be stored in an airtight container at room temperature for up to 2 days; reheat gently before serving.
