This Slow Cooker Buttery Beef and Potatoes recipe is an easy, comforting meal perfect for busy days. Tender chunks of chuck roast, baby red potatoes, carrots, and onions are slow-cooked together with garlic, black pepper, and savory onion soup mix, all topped with rich butter slices for a buttery, flavorful finish. The result is a hearty, melt-in-your-mouth stew with minimal effort and maximum taste.

Ingredients

Beef and Vegetables

  • 2 pounds chuck roast, cut into 2-inch pieces (or pre-cut stew meat)
  • 1-2 pounds baby red potatoes, quartered
  • 1 pound baby carrots
  • 1 onion, sliced
  • 4 garlic cloves, minced

Seasonings and Fats

  • 1 packet onion soup mix
  • 1 teaspoon black pepper
  • 4 tablespoons butter, cut into slices (salted or unsalted)

Instructions

  1. Prepare the slow cooker: Spray the inside of a 6-8 quart slow cooker with non-stick spray or line it to prevent sticking and make cleanup easier.
  2. Add ingredients: Place the quartered potatoes, beef chunks, baby carrots, sliced onion, minced garlic, onion soup mix, and black pepper into the slow cooker. Mix all the ingredients together gently to distribute the seasonings evenly.
  3. Add butter: Arrange the 4 tablespoons of butter slices evenly on top of the mixed ingredients inside the slow cooker. This will melt during cooking, adding richness and flavor.
  4. Cook the stew: Cover the slow cooker with its lid and cook on low heat for 6 hours or on high heat for 3 hours, until the beef is tender and the vegetables are cooked through.
  5. Serve: Once cooked, give the stew a gentle stir to blend the butter into the broth and serve warm.

Notes

  • You can use salted or unsalted butter based on your preference.
  • For more flavor, sear the beef in a hot skillet before adding to the slow cooker, though it's optional.
  • If you prefer, add fresh herbs like thyme or rosemary to boost aroma.
  • Adjust cooking time depending on your slow cooker’s heat settings and size.
  • Serve with crusty bread or over rice for a fuller meal.
