This sirloin steak recipe delivers perfectly cooked, juicy steaks every time by combining a flavorful marinade with a precise two-step cooking process: stovetop searing followed by oven baking. Ideal for steak lovers seeking a tender, richly browned crust and a juicy inside, this method ensures consistent results with clear temperature guidelines for every level of doneness.

Ingredients

Marinade

  • 1 recipe Steak marinade (your preferred marinade or seasoning mix)

Main Ingredients

  • 4 8-oz sirloin steaks
  • 1 tbsp unsalted butter

Instructions

  1. Prepare the Marinade: Prepare your chosen steak marinade according to instructions and marinate the sirloin steaks for at least 3 hours and up to 24 hours to ensure maximum flavor and juiciness. If desired, you can skip marinating and season the steaks generously with salt and pepper instead.
  2. Bring to Room Temperature: Remove the marinated steaks from the refrigerator about 30 minutes before cooking to let them come to room temperature. Pat each steak dry with a paper towel to ensure a good sear.
  3. Preheat Oven and Skillet: Preheat your oven to 400 degrees F (204 degrees C). At the same time, heat a cast iron skillet over medium-high heat on the stovetop for about 3 minutes until hot.
  4. Sear the Steaks: Add the butter to the hot skillet and allow it to melt. Place the steaks in a single layer without overcrowding. Sear the first side for about 2 minutes until browned and grill marks form, then flip and sear the other side for 1-2 minutes.
  5. Finish in the Oven: Transfer the skillet with the seared steaks directly into the preheated oven. Bake for 2 to 6 minutes depending on your desired doneness: 2 minutes for rare, 3 minutes for medium-rare, 4 minutes for medium, 5 minutes for medium-well, and 6 minutes for well done. Use a meat thermometer to verify internal temperature (120°F rare; 130°F medium-rare; 140°F medium; 150°F medium-well; 160°F well done). Remember the steak will rise about 5 degrees while resting.
  6. Rest the Steaks: Remove the skillet from the oven and transfer the steaks to a plate, avoiding leaving them in the hot pan to prevent overcooking. Let them rest for 5 minutes before slicing to allow juices to redistribute.

Notes

  • Marinating the steaks enhances juiciness and flavor, but is optional if you're short on time.
  • Patting steaks dry before searing prevents steaming and helps develop a better crust.
  • A cast iron skillet is recommended for even heat distribution and excellent searing.
  • Use a meat thermometer for precise doneness and avoid cutting the steak immediately to keep it juicy.
  • Letting steaks rest after cooking is crucial to allow juices to retain moisture inside the meat.
