  • Carrots or rainbow carrots, peeled and cut into sticks - 1 cup
  • Radishes, quartered - 1 cup
  • Cucumbers, sliced in rounds or short spears - 1 cup
  • Cooked beets, quartered - 1 cup

Dips

  • Tzatziki sauce - 1/2 cup
  • Walnut spinach yogurt dip - 1/2 cup
  • Roasted red pepper hummus - 1/2 cup

Additional Accompaniments

  • Olives (pitted kalamata or green olives) - 1/2 cup
  • Marinated artichoke hearts - 1/2 cup
  • Pickles - 1/2 cup
  • Pickled or marinated mushrooms - 1/2 cup
  • Cheese (feta or baby mozzarella) - 1 cup
  • Pita wedges (optional) - 1 cup

Instructions

  1. Prepare the Dips and Bowls: Place a small bowl of tzatziki sauce or your chosen dip on one side of a large serving platter or board. If you are using two dips, arrange the two bowls on opposite sides of the platter to create balance.
  2. Arrange the Vegetables: Neatly place the fresh vegetables around the dip bowls on the platter. Make sure to separate veggies of similar colors and place contrasting colors and textures next to each other to create an attractive and vibrant display.
  3. Fill in the Gaps: Fill any remaining spaces on the platter with olives, marinated artichoke hearts, pickles, pickled or marinated mushrooms, cheese, and optionally pita wedges. This will make the platter look abundant and inviting.

Notes

  • You can customize the platter with your favorite fresh and pickled vegetables or different varieties of dips according to your taste.
  • For best presentation, use colorful veggies and arrange contrasting colors side by side.
  • Use pita wedges or crackers for a more substantial serving if desired.
  • This recipe is naturally gluten-free if pita is omitted or gluten-free pita is used.
