Ingredients

Salmon and Vegetables

  • 2 6 oz fresh salmon filets
  • Kosher salt and freshly ground black pepper
  • 1 tsp honey
  • Olive oil
  • Everything bagel seasoning
  • 10 oz raw asparagus, trimmed and sliced

To Serve

  • Cooked rice or another grain
  • Arugula and/or spinach

Lemon Dill Yogurt Sauce

  • 1/2 cup plain yogurt (dairy-free optional)
  • 2 tbsp fresh dill, chopped
  • Zest from 1 small lemon
  • 1 tsp olive oil
  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper to prevent sticking and for easy cleanup.
  2. Season Salmon: If your everything bagel seasoning doesn’t contain added salt, generously season the salmon filets with kosher salt and let them rest for 10 minutes. If the seasoning already has salt, you can skip this step.
  3. Prepare Salmon: Drizzle the salmon filets with honey and olive oil. Thoroughly coat each filet with everything bagel seasoning on all sides. Arrange the salmon on one side of the prepared sheet pan.
  4. Prepare Asparagus: On the other side of the sheet pan, toss the trimmed and sliced asparagus with a drizzle of olive oil, salt, and freshly ground black pepper. Spread the asparagus in an even layer for even roasting.
  5. Roast Salmon and Asparagus: Place the sheet pan in the oven and roast for 11-14 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
  6. Make Lemon Dill Yogurt Sauce: While the salmon and asparagus roast, combine the plain yogurt, chopped fresh dill, lemon zest, olive oil, and salt and pepper to taste in a small bowl. Mix well until smooth and set aside.
  7. Serve: Serve the roasted salmon and asparagus over cooked rice or your favorite grain, alongside fresh arugula and/or spinach. Add a dollop of the lemon dill yogurt sauce on top for a bright, tangy finish.

Notes

  • Check the ingredients of your everything bagel seasoning for added salt to avoid over-seasoning the salmon.
  • Use dairy-free yogurt if you prefer a vegan or dairy-free option for the sauce.
  • You can substitute rice with quinoa, couscous, or any other grain you like.
  • For extra flavor, add a squeeze of fresh lemon juice over the salmon just before serving.
  • Leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
