This recipe for Roasted Chai Apple Butter combines tender roasted apples with warm chai spices to create a smooth, flavorful spread perfect for toast, baking, or adding a spiced sweetness to your favorite dishes. The roasting process deepens the apple flavor, while the slow stovetop simmer thickens the butter to a luscious texture.

Ingredients

Apple Butter Base

  • 3 pounds apples
  • 1 1/2 cups apple cider, divided
  • 1/2 cup dark brown sugar
  • 3 tablespoons butter

Spices and Flavorings

  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ground ginger
  • Pinch of allspice
  • Pinch of ground pepper

Instructions

  1. Preheat the oven: Set your oven to 400°F (204°C) to prepare for roasting the apples, which will intensify their natural sweetness and soften them.
  2. Prepare and roast the apples: Wash the apples and quarter them. Place the quarters in a large roasting pan, then pour half of the apple cider (3/4 cup) over them. Sprinkle the dark brown sugar evenly atop the apples and dot the surface with butter. Roast for about 30 minutes until the apples are soft and begin to caramelize.
  3. Transfer and puree the apples: Remove the roasting pan from the oven. Carefully transfer the roasted apples along with all the juices into a heavy-bottomed pot. For a smooth texture, press the apples through a food mill or ricer. If you don't have one, puree the mixture in a blender or food processor and return it to the pot.
  4. Add remaining ingredients: Stir in the remaining 3/4 cup of apple cider, apple cider vinegar, cinnamon, cardamom, ground ginger, allspice, and ground pepper. Mix well to combine all flavors evenly.
  5. Simmer and thicken: Cook the mixture over low heat, stirring occasionally, for 45 minutes to 1 hour, until it thickens and develops a glossy appearance. This slow stovetop cooking step concentrates flavors and achieves the perfect apple butter consistency.
  6. Cool and store: Allow the apple butter to cool to room temperature. Transfer it to a container and refrigerate until ready to use. The flavors will continue to meld and improve after resting.

Notes

  • Use a mix of sweet and tart apples for balanced flavor.
  • You can adjust the spices to suit your taste preferences, adding more cinnamon or ginger if desired.
  • If you prefer chunkier apple butter, pulse the puree less and skip the food mill step.
  • Store in an airtight container in the refrigerator for up to two weeks.
  • Apple butter also freezes well—store in freezer-safe containers for up to 3 months.
