This simple roasted carrots recipe produces tender, caramelized carrots with a perfect balance of savory seasoning and a hint of sweetness from roasting. Featuring basic pantry staples like olive or avocado oil, salt, and pepper, this easy side dish is perfect for weeknight dinners or holiday meals.

Ingredients

Vegetables

  • 1 lb. raw carrots (5-6 medium carrots), cut into 2-inch pieces

Seasonings & Oils

  • 1 tablespoon avocado oil or olive oil
  • ½ teaspoon fine salt
  • Pinch of fresh ground black pepper

Optional Garnish

  • Chopped fresh herbs (such as parsley or thyme)
  • Flaked sea salt

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Toss the carrots: Place the carrot pieces directly on the lined baking sheet and drizzle with the avocado or olive oil. Sprinkle with fine salt and a pinch of freshly ground black pepper. Toss everything together on the sheet to evenly coat the carrots with oil and seasoning, then arrange in a single even layer to ensure uniform roasting.
  3. Roast the carrots: Bake the carrots in the preheated oven for 15 to 18 minutes, checking for fork-tenderness and a slight browning depending on how thick your carrot pieces are. The roasting process will caramelize their natural sugars, enhancing their flavor.
  4. Garnish and serve: Remove the roasted carrots from the oven and, if desired, garnish with chopped fresh herbs and a sprinkle of flaked sea salt for an extra burst of flavor and texture. Serve warm as a delicious side dish.
  5. Store leftovers: Transfer any leftover roasted carrots to an airtight container and store in the refrigerator for up to 3 days. Reheat gently before serving.

Notes

  • You can use either avocado oil or olive oil depending on your flavor preference and what you have on hand.
  • Cut carrots uniformly to ensure even cooking.
  • Adjust roasting time if your carrots are cut thicker or thinner.
  • Fresh herbs like parsley, thyme, or dill complement the roasted carrots well.
  • This recipe can be doubled easily by using a larger baking sheet or roasting in batches.
  • Leftover roasted carrots can be added to salads, grain bowls, or blended into soups.
