This warm and creamy Reuben Dip combines classic deli flavors into a rich and savory appetizer perfect for gatherings. Made with corned beef, cream cheese, sauerkraut, sour cream, Swiss cheese, and an optional touch of Thousand Island dressing, it’s slow-cooked until melty and served warm with rye bread or crackers.

Ingredients

Main Ingredients

  • 4 packages (2 ounces each) thinly sliced deli corned beef, finely chopped (8 ounces total)
  • 1 package (8 ounces) cream cheese, cubed
  • 1 can (8 ounces) sauerkraut, rinsed and drained
  • 1 cup sour cream
  • 1 cup shredded Swiss cheese
  • 1/4 cup Thousand Island salad dressing (optional)
  • Rye bread or crackers, for serving

Instructions

  1. Combine Ingredients: In a 1-1/2-quart slow cooker, add the finely chopped corned beef, cubed cream cheese, rinsed and drained sauerkraut, sour cream, shredded Swiss cheese, and the optional Thousand Island dressing.
  2. Cook the Dip: Cover the slow cooker with the lid and cook on low heat for two hours. During this time, the cream cheese and Swiss cheese will melt completely, blending all the flavors together.
  3. Stir and Serve: After cooking, stir the dip thoroughly to ensure a uniform mixture. Serve the warm Reuben dip immediately with rye bread, pretzels, or crackers for dipping.

Notes

  • Rinse and drain the sauerkraut well to avoid excess liquid in the dip.
  • Thousand Island dressing is optional but adds a tangy, creamy flavor that complements the dip.
  • If you don’t have a slow cooker, you can heat the ingredients gently on the stovetop over low heat, stirring often until melted and blended.
  • For a spicier kick, consider adding a small amount of hot sauce or horseradish to the dip before cooking.
  • This dip is best served warm. If reheating, do so gently to avoid curdling the dairy ingredients.
