These Rainbow Fruit Skewers are a vibrant and healthy snack featuring a colorful assortment of fresh fruits drizzled with melted dark chocolate. Perfect as a refreshing treat or a fun dessert, these skewers combine juicy strawberries, sweet oranges, pineapple chunks, banana slices, and kiwi pieces. Finished with a drizzle of rich melted chocolate and an optional sprinkle of flaky sea salt, they offer a delightful balance of sweet and tangy flavors with a touch of indulgence.

Ingredients

Fruit

  • 6 strawberries, hulled
  • 1 orange, peeled, segmented, and cut in half
  • ½ of a ripe pineapple, peeled, cored, and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)
  • 1 banana, cut into 1-inch slices
  • 2 kiwi fruit, peeled and cut into 1-inch chunks

Chocolate Drizzle

  • 1 bar of semi-sweet or dark chocolate (vegan or dairy-free if desired)
  • Optional: flaky sea salt

Instructions

  1. Prepare the Fruit Skewers: Arrange the prepared fruits onto wooden skewers in rainbow order—start with strawberry, then orange, pineapple, banana, and finish with kiwi. Place the finished skewers on a large plate or a baking pan lined with parchment or wax paper to keep them neatly organized.
  2. Melt the Chocolate: Break the chocolate bar into small pieces and place them in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between each interval until the chocolate has melted smoothly and is ready for drizzling.
  3. Drizzle and Finish: Drizzle the melted chocolate evenly over the fruit skewers. Optionally, sprinkle flaky sea salt on top to add a savory contrast to the sweetness. To set the chocolate, place the plate of skewers into the freezer for about 5 minutes or until the chocolate hardens. Serve immediately and enjoy the refreshing, fruity dessert with a chocolate twist.

Notes

  • Use vegan or dairy-free chocolate to make this recipe dairy-free or vegan-friendly.
  • To prevent fruit from browning, prepare and serve soon after slicing, especially the banana.
  • If you don't have a microwave, melt the chocolate using a double boiler method on the stovetop.
  • For extra flavor, sprinkle the fruit skewers with chopped nuts or shredded coconut before drizzling chocolate.
  • The skewers can be stored in the refrigerator for up to 2 hours but are best enjoyed fresh.
