Delight in these vibrant Rainbow Donuts featuring a gluten-free, sweet batter swirled with colorful nonpareils and topped with a luscious chocolate ganache. Perfectly baked to a tender crumb, these donuts offer a festive treat with a beautiful rainbow effect inside and a glossy, sprinkle-studded finish.

Ingredients

Donut Batter

  • 2 cups multipurpose gluten free flour (with xanthan gum)
  • 1.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 rounded tablespoons cornstarch mixed with 3 tablespoons water
  • 1.5 cups milk
  • 2 tablespoons unsalted butter or vegan baking stick (melted)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup rainbow nonpareils

Chocolate Icing

  • 2 cups chocolate chips (about 12 oz)
  • 1/2 cup milk
  • Extra rainbow nonpareils for sprinkling

Instructions

  1. Preheat oven and prepare pans: Preheat your oven to 350°F. Grease two donut pans thoroughly with vegetable oil to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, and kosher salt. Set this mixture aside.
  3. Melt butter: Place the butter or vegan baking stick in a small heat-safe bowl and microwave in 10-second increments until fully melted. Allow it to cool before using.
  4. Prepare cornstarch slurry: In a small bowl, combine cornstarch and water, stirring until thin and watery. It may initially be thick and tacky but will loosen as you stir.
  5. Combine wet ingredients: In a medium bowl, whisk together the cornstarch mixture, milk, cooled melted butter, and vanilla extract until well combined. Ensure the butter isn’t hot to avoid curdling.
  6. Combine wet and dry mixtures: Slowly pour the wet ingredients into the dry components. Whisk gently until combined, switching to a spatula if the batter becomes too thick.
  7. Add rainbow nonpareils: Fold in the 1/4 cup of rainbow nonpareils gently using a spatula to create a colorful swirl without fully blending the colors.
  8. Fill donut pans: Transfer the batter into a piping bag or a zip-top bag with a corner snipped off. Pipe the batter into the greased donut wells, filling nearly to the top. For best swirl effect, use a new bag if needed. Alternatively, spoon the batter in.
  9. Smooth batter: Use a small knife or the back of a spoon to smooth the batter tops gently.
  10. Bake donuts: Place the donut pans in the center rack and bake at 350°F for about 20 minutes. The donuts are done when they have risen and spring back to touch, or a toothpick inserted comes out clean.
  11. Cool donuts: Let donuts cool in the pans for at least 5 minutes to prevent sticking and breaking. Then, carefully loosen with a small spatula and transfer to a cooling rack placed over parchment paper or a baking sheet.
  12. Make chocolate icing: Combine chocolate chips and 1/2 cup milk in a microwave-safe bowl. Heat in 15-second increments, stirring after each until the chocolate is melted and the mixture is smooth and glossy.
  13. Dip donuts: Once cooled, dip the tops of the donuts into the chocolate icing, then immediately sprinkle extra rainbow nonpareils over the top for decoration.
  14. Dry donuts: Allow the dipped donuts to dry on a cooling rack with wax paper underneath to catch drips, preventing soggy bottoms and mess.
  15. Serve: Enjoy these donuts warm with gooey chocolate ganache or after the icing has set slightly. Both options are delicious.

Notes

  • Make sure the melted butter is cooled before mixing with cold milk to prevent curdling.
  • Using a piping bag can help maintain the rainbow swirl effect in the batter.
  • Allow donuts to cool sufficiently in the pan before removing to avoid breaking.
  • If a toothpick inserted in the donut comes out with wet batter, bake a few minutes longer.
  • Let the chocolate icing set on a rack to avoid soggy bottoms on the donuts.
  • Gluten-free flour with xanthan gum is recommended for structure.
  • These donuts are best enjoyed fresh but can be stored tightly covered for 1-2 days.
