Ingredients

Muffins

  • 1 ½ cups (195g) all-purpose flour, spooned and leveled
  • 3/4 cup (150g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon finely ground black pepper
  • 1/3 cup (80ml) vegetable oil
  • 1 large egg
  • 1/3 to 1/2 cup (80ml – 120ml) reduced fat or whole milk
  • 1 ½ teaspoons vanilla extract
  • 8 ounces (226g) fresh strawberries, hulled and diced (about 1 ¼ cups diced)

Topping

  • 1 tablespoon granulated sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat the oven to 400°F (204°C). Line 12 standard-size muffin cups with paper liners for easy removal and cleanup.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, fine sea salt, ground cinnamon, and finely ground black pepper until well combined.
  3. Combine Wet Ingredients: Choose a measuring jug that holds at least 1 cup. Add the vegetable oil and crack in the large egg. Pour in milk to the 1-cup line on the jug (approximately 1/3 cup of milk). Add vanilla extract and whisk thoroughly until the mixture is smooth.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with dry ingredients. Gently stir until the batter just comes together; do not overmix as this will result in tough muffins. The batter will be thick.
  5. Fold in Strawberries: Carefully fold the diced fresh strawberries into the batter to evenly distribute without breaking them apart.
  6. Prepare Vanilla Sugar Topping: In a small bowl, stir together 1 tablespoon of granulated sugar and 1/4 teaspoon of vanilla extract to create the topping.
  7. Fill Muffin Cups: Evenly divide the batter among the prepared muffin cups. Sprinkle a little vanilla sugar mixture on top of each muffin for a sweet, flavorful crust.
  8. Bake Muffins: Bake in the preheated oven for 15 to 20 minutes, or until the muffin tops are no longer wet and a toothpick inserted into the center comes out with moist crumbs but no wet batter.
  9. Cool: Remove muffins from the oven and transfer them to a cooling rack. Allow to cool before serving to ensure best texture and flavor.

Notes

  • Do not overmix the batter; a thick consistency with some lumps is normal and helps create tender muffins.
  • Using fresh, ripe strawberries is key to getting the best flavor and texture in your muffins.
  • If you prefer, you can substitute vegetable oil with melted butter for a richer taste.
  • Feel free to adjust the sugar amount if you prefer a sweeter or less sweet muffin.
  • Muffins are best eaten on the day they are baked but can be stored in an airtight container for up to 2 days.
