Ingredients
Vegetables
1 large green or red cabbage
Seasonings & Oils
3 tablespoons olive oil (or melted butter for a richer flavor)
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon dried thyme
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
Optional Toppings
Grated Parmesan cheese
Red pepper flakes
Fresh parsley
Instructions
Preheat Oven: Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent the cabbage steaks from sticking during roasting.
Prepare Cabbage Steaks: Remove any wilted or damaged outer leaves from the cabbage. Using a sharp knife, slice the cabbage into ¾-inch thick rounds or steaks. Keep the core intact as it holds the steaks together and makes handling easier.
Mix Seasoning: In a small bowl, combine olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper. Mix well until evenly blended.
Coat Cabbage Steaks: Generously brush the seasoned oil mixture onto both sides of each cabbage steak, ensuring even coverage for maximum flavor penetration.
Roast: Place the cabbage steaks on the prepared baking sheet in a single layer, leaving space between each. Roast in the preheated oven for 25 to 30 minutes, flipping halfway through cooking to ensure even caramelization and tenderness.
Serve: Once roasted and tender, optionally garnish with grated Parmesan cheese, red pepper flakes, or fresh parsley for added flavor and presentation.
Notes
Keep the core intact while slicing to help the steaks hold together during roasting.
Adjust salt according to your taste preference.
Adding melted butter instead of olive oil will give a richer flavor.
Flip the steaks halfway through roasting for even browning and texture.
Optional toppings add extra flavor but can be omitted to keep it vegan.
