This Oven Roasted Cauliflower recipe delivers perfectly crispy, tender cauliflower florets seasoned with a blend of garlic powder, paprika, and pepper. Roasting with olive oil and melted butter gives the cauliflower a rich, golden flavor ideal as a healthy side dish that complements any meal.

Ingredients

Vegetables

  • 1 medium cauliflower (sliced into small florets or 1/2" thick steaks)

Oils & Fats

  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter (melted)

Seasonings

  • ½ tsp garlic powder
  • ½ tsp salt (or to taste)
  • ¼ tsp ground paprika
  • ¼ tsp ground black pepper (or to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 425˚F and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Cauliflower: Slice the head of cauliflower into 1/2" thick steaks, then break those steaks into even, bite-sized florets or wedges for uniform cooking.
  3. Coat with Oils: Place the cauliflower pieces in the center of the prepared baking sheet. Drizzle with olive oil and melted butter, then toss well to ensure all pieces are evenly coated with the fats.
  4. Season: In a small bowl, mix together garlic powder, salt, paprika, and black pepper. Sprinkle this seasoning mixture evenly over the cauliflower and toss again to distribute the flavors thoroughly.
  5. Roast: Spread the seasoned cauliflower out in a single layer on the baking sheet. Roast in the preheated oven for 15-20 minutes, until the cauliflower is tender and has reached your desired level of crispiness and golden brown color.

Notes

  • For extra crispiness, flip the cauliflower halfway through roasting.
  • You can adjust the seasoning quantities to suit your taste preference.
  • Using a mix of olive oil and butter adds richness but you can use all olive oil to make it vegan.
  • Serve immediately for the best texture and flavor.
  • Cauliflower steaks are thicker slices that present nicely for roasting and serving.
