This Oven Baked Blackened Salmon recipe delivers a perfectly seasoned, juicy salmon fillet with a smoky, spicy blackened crust. Easy to prepare and baked to perfection, it’s a flavorful and healthy main dish that’s perfect for weeknight dinners or special occasions.

Ingredients

Salmon

  • 2-3 pounds whole salmon filet (skin on)
  • 3 tablespoons unsalted butter (melted)
  • Lemon (optional, for serving)
  • Parsley (optional, for garnish)

Blackening Seasoning

  • 1 ½ teaspoons smoked paprika
  • 1 ½ teaspoons regular paprika
  • 1 ½ teaspoons salt
  • ¾ teaspoons onion powder
  • ¾ teaspoons garlic powder
  • ¾ teaspoons cayenne pepper
  • ½ teaspoon fresh cracked black pepper
  • ½ teaspoons dried oregano
  • ½ teaspoons dried thyme
  • ½ teaspoon sugar

Instructions

  1. Prep: Preheat the oven to 425°F (220°C) and position the oven rack at the center. Carefully check the salmon fillet for any pin bones by running your finger along it, and remove any with a fish tweezer. Pat the salmon dry thoroughly with paper towels. Line a large baking sheet with parchment paper and place the salmon fillet skin side down in the center.
  2. Mix: Melt the unsalted butter by microwaving it in 20-second increments, stirring between each until fully melted. In a small bowl, combine the smoked paprika, regular paprika, salt, onion powder, garlic powder, cayenne pepper, black pepper, oregano, thyme, and sugar. Stir the seasoning blend into the melted butter until evenly mixed.
  3. Season: Using a brush, generously and evenly coat the flesh side of the salmon with the butter and blackening seasoning mixture, ensuring full coverage for maximum flavor.
  4. Bake: Place the baking sheet in the preheated oven and bake the salmon for 15-20 minutes, or until the center reaches an internal temperature of about 125°F (51°C) when checked with an instant-read thermometer. If the salmon is not sufficiently blackened on top, finish it by placing it under the broiler for 1-2 minutes until it develops a darkened, blackened crust.
  5. Serve: Remove the salmon from the oven and cut into individual servings. Serve warm, garnished with fresh lemon wedges and parsley if desired, or alongside an herbaceous Persillade Sauce for added flavor.

Notes

  • Ensure to remove all pin bones for a pleasant eating experience.
  • Adjust cayenne pepper quantity to control the heat level.
  • Use a thermometer to avoid overcooking and keep the salmon moist and tender.
  • Optional lemon and parsley add freshness and brightness.
  • For an extra touch, try serving with Persillade Sauce or your favorite herb sauce.
