These outrageous 1-hour cinnamon rolls are a quick and delicious treat with a soft, buttery dough, a generous cinnamon-sugar filling, and a luscious cream cheese icing. Perfect for breakfast or dessert, these rolls come together in just about an hour using a simple mixing and baking process.

Ingredients

Dough

  • 5 tablespoons salted butter, melted
  • 1 cup warm milk (110-115ºF)
  • 4 - 4 ¾ cups all-purpose flour, plus more for rolling
  • ⅓ cup granulated sugar
  • ¾ teaspoon kosher salt
  • 2 ¼ teaspoons instant yeast
  • 1 tablespoon powdered milk
  • 2 large eggs, room temperature

Filling

  • 5 tablespoons salted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 ½ tablespoons ground cinnamon
  • ⅛ teaspoon ground nutmeg (optional)

Icing

  • 4 ounces cream cheese, room temperature
  • 4 tablespoons salted butter, room temperature
  • 2 teaspoons lemon juice
  • ½ teaspoon vanilla extract
  • 1 ⅓ cups powdered sugar
  • 1-2 tablespoons milk

Instructions

  1. Make the Dough: In the bowl of an electric mixer fitted with a dough hook, combine 4 cups flour, granulated sugar, kosher salt, powdered milk, and instant yeast. Whisk together until blended. Add warm milk, eggs, and melted butter to the mixture. Mix on medium-low speed for 5-7 minutes, adding 1-2 tablespoons of flour at a time if the dough sticks to the sides, until it pulls away and forms a smooth ball. Remove dough from the hook, cover with plastic wrap, and let rest for 10 minutes.
  2. Prepare the Filling: Position a rack in the center of the oven and preheat the oven to 200ºF. In a small bowl, whisk together brown sugar, granulated sugar, cinnamon, and optional nutmeg; set aside.
  3. Roll and Assemble Rolls: Turn dough out onto a lightly floured surface and roll into a 16 x 10-inch rectangle. Spread softened butter evenly over the dough using an offset spatula. Sprinkle the cinnamon-sugar mixture over the butter and gently press it in. Roll the dough tightly from the long edge, pinch the seam to seal, and cut into 12 slices using dental floss or a sharp knife. Arrange slices in a lightly greased or parchment-lined 13x9-inch baking pan. Turn oven off, cover rolls loosely with a damp tea towel, and place the pan inside the warm oven for 20 minutes to rise.
  4. Bake the Rolls: Remove the risen rolls from the oven and set on the counter. Preheat the oven to 375ºF with a rack positioned near the center. Bake rolls for 18-22 minutes until golden brown and an internal temperature of 190-200ºF is reached. Tent with foil if browning too quickly. Remove from oven and let cool on a wire rack for a few minutes.
  5. Make the Icing: In a medium bowl, whisk together cream cheese and butter until smooth. Add powdered sugar, lemon juice, and vanilla extract, mixing on low speed until smooth. Add milk one tablespoon at a time until the icing reaches desired consistency. Drizzle icing over the warm cinnamon rolls using an offset spatula. Serve warm.

Notes

  • Ensure the milk is warm (110-115ºF) for optimal yeast activation.
  • Use dental floss cleanly to cut rolls without squashing them.
  • For extra fluffy rolls, do not skip the 20-minute rise in the warm oven.
  • Check rolls with a thermometer to prevent under or over baking.
  • Adjust milk in icing for thicker or thinner glaze depending on preference.
  • Nutmeg is optional but adds a warm depth of flavor to the filling.
