Ingredients

Vegetables and Herbs

  • 5 small yellow onions, sliced (or 3 large onions)
  • 1 head garlic, top sliced off
  • ½ cup sun dried tomatoes, chopped
  • 1 handful fresh parsley, chopped
  • 1 handful fresh basil, chopped
  • 1 lemon, juiced

Spices and Seasonings

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley

Liquids and Others

  • ½ cup coconut milk
  • 3 cups farfalle pasta, cooked according to package directions
  • Olive oil or leftover sun dried tomato oil, for drizzling

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the onions and garlic.
  2. Prepare the Casserole Dish: In a casserole dish, add the sliced onions, chopped sun dried tomatoes, paprika, salt, black pepper, and dried parsley. Toss everything together so the spices coat the vegetables evenly.
  3. Add Garlic and Oil, Then Roast: Place the whole garlic head with the sliced top in the center of the casserole dish. Drizzle olive oil or leftover sun dried tomato oil over the entire dish. Cover with foil and roast in the oven for about 1 hour. Toss the onions and vegetables halfway through the cooking time to promote even caramelization. The onions should be golden and caramelized when finished.
  4. Cook the Pasta: About 20 minutes before the onions are done, cook the farfalle pasta according to package instructions. Reserve up to 1 cup of the pasta cooking water before draining.
  5. Squeeze Roasted Garlic and Combine: Remove the garlic head from the casserole dish once cool enough to handle. Squeeze the soft roasted garlic cloves out into the dish. Add the fresh chopped parsley, basil, lemon juice, coconut milk, cooked pasta, and a splash of reserved pasta water as needed to loosen the sauce.
  6. Toss and Serve: Stir everything together well to combine the creamy sauce with pasta and vegetables. Serve immediately and enjoy the rich, layered flavors.

Notes

  • Using the whole roasted garlic head adds a mild, sweet garlic flavor that complements the caramelized onions perfectly.
  • Be sure to toss the onions halfway through roasting to ensure even caramelization and prevent burning.
  • If you prefer a dairy-free creamy texture, coconut milk is an excellent choice but you can substitute with other plant-based milk or light cream if desired.
  • Reserve pasta water carefully as it helps loosen the sauce while keeping it creamy and cohesive.
  • This dish can be made with other types of pasta if farfalle is not available.
