This One Bowl Smashed Chickpea Salad is a quick and delicious plant-based recipe perfect for a light lunch or snack. Made with simple ingredients like chickpeas, fresh vegetables, and a flavorful dressing, this salad comes together in just 20 minutes and can be served on its own, in lettuce wraps, or as a sandwich filling. It’s vegan-friendly and packed with protein and fiber, making it both satisfying and nourishing.

Ingredients

Chickpea Salad

  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup finely diced red onion
  • 1/2 cup finely diced celery
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup mayonnaise of choice – vegan or regular avocado oil mayo
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice or white wine vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt, or to taste

Instructions

  1. Smash the chickpeas: Drain and rinse the canned chickpeas thoroughly. Place them in a large bowl and use a fork, pastry cutter, potato masher, or the back of a sturdy wooden spoon to mash the chickpeas until they reach a rough but not overly smooth consistency.
  2. Add remaining ingredients: To the mashed chickpeas, add the finely diced red onion, celery, chopped fresh parsley, mayonnaise, Dijon mustard, lemon juice or white wine vinegar, paprika, black pepper, and kosher salt. Stir everything together until well combined.
  3. Season and serve: Taste and adjust the seasoning by adding more salt and pepper if desired. Serve the smashed chickpea salad on its own, over a bed of greens, in lettuce wraps, with crackers, or spread on toasted bread as a sandwich filling. Enjoy!

Notes

  • For a spicier taste, add a pinch of cayenne pepper or hot sauce.
  • Use vegan mayonnaise to keep the recipe completely plant-based.
  • The salad can be stored covered in the refrigerator for up to 3 days.
  • Try adding chopped pickles or capers for extra tang and crunch.
  • For a creamier texture, add a little more mayonnaise or a splash of olive oil.
