Delight in these fun and easy Mini Pancakes Cereal made from scratch using simple ingredients. Perfect for a playful breakfast or a creative snack, these tiny pancakes are cooked individually on a stovetop skillet and can be enjoyed with milk like cereal or topped with your favorite syrup and fruits.

Ingredients

Main Ingredients

  • 150 g all-purpose flour (5.3 oz)
  • 1 large egg
  • 35 g sugar (1.25 oz)
  • 180 ml milk (6.10 fl oz)
  • 3 tbsp butter (or coconut oil or cooking oil, plus extra for greasing)
  • 1/3 tsp baking powder
  • 1/2 tsp baking soda (soda bicarbonate)
  • 2 tbsp lemon juice
  • 1 pinch salt (pink Himalayan preferred)
  • 1 tsp vanilla essence

Instructions

  1. Mix Dry Ingredients: Place the flour into a bowl and create a well in the center. Add the baking powder, baking soda, lemon juice, sugar, salt, and vanilla essence. Stir together until they are well combined.
  2. Add Melted Butter: Melt the butter gently without overheating and pour it into the flour mixture. Mix to incorporate the butter evenly.
  3. Incorporate Egg and Milk: Lightly beat the egg and add it to the mixture. Use a wire whisk to blend. Gradually pour in the milk while continuously whisking to avoid lumps. Adjust with a little more milk if the batter is too thick. Let the batter rest for 10-15 minutes to thicken and develop flavors.
  4. Prepare the Pan: Heat a nonstick pan over medium heat. Lightly grease the surface using a brush or tissue with a bit of butter, coconut oil, or cooking oil to prevent sticking.
  5. Pipe the Mini Pancakes: Transfer the batter into a baster, squeezable bottle, or a zip-lock bag with a tiny corner cut to pipe out small dots of batter onto the hot pan, spacing them evenly.
  6. Cook the Pancakes: Cook until tiny bubbles form on the surface and the tops look dry. Flip each mini pancake using a spatula and cook for an additional 30-40 seconds or until the underside is golden brown. Repeat with all the batter, greasing the pan lightly as needed between batches.
  7. Serve: Enjoy these mini pancakes hot or cold, with milk like cereal or topped with syrup, fruits, or any favorite toppings.

Notes

  • Use a nonstick pan for the best results and to avoid sticking.
  • Resting the batter helps improve texture and flavor.
  • Adjust milk quantity to get a smooth, pourable batter but not too thin.
  • Butter can be substituted with coconut oil or other cooking oils as preferred.
  • Perfect for serving as a cereal with milk or as small bite-sized pancakes with toppings.
