These Mini Apple Pie Cups are a delightful twist on classic apple pie, using cinnamon roll dough to create a fun and easy-to-make dessert perfect for any occasion. With tender cinnamon crusts filled with sweet apple pie filling and topped with creamy cinnamon roll icing, these bite-sized treats are sure to please both kids and adults alike.

Ingredients

For the Crust

  • 2 containers cinnamon rolls (such as Cinnabon or Pillsbury)

For the Filling

  • 21 oz apple pie filling

Other

  • Cooking spray

Instructions

  1. Preheat the oven: Set your oven to 375 degrees Fahrenheit to ensure it reaches the right temperature for baking the mini pies.
  2. Prepare the muffin tin: Generously spray a muffin tin with cooking spray to prevent sticking. Place one cinnamon roll in each muffin cup. Press the roll flat at the bottom and push it evenly up the sides to form a small cup that will act as the pie crust.
  3. Fill and bake: Spoon apple pie filling into each cinnamon roll cup, filling them carefully without overstuffing. Bake in the preheated oven for 14 to 18 minutes or until the crusts turn a beautiful golden brown color.
  4. Cool the pies: Remove the muffin tin from the oven and place it on a wire rack. Let the mini pies cool for about 5 minutes in the tin, then gently remove them and allow to cool completely on the rack.
  5. Ice and serve: Carefully extract the icing from both cinnamon roll cans into a pastry bag or a zip-lock bag with a small corner cut off. Once the pies are fully cooled, pipe the icing on top of each mini apple pie cup. Serve and enjoy your sweet treat!

Notes

  • Make sure to press the cinnamon roll dough evenly on the sides of the muffin tin to prevent holes and leakage of filling.
  • Use a wire rack for cooling to help the bottoms stay crisp.
  • These mini pies are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
  • For extra flavor, sprinkle a pinch of cinnamon or nutmeg on top of the apple filling before baking.
  • Leftover icing can be refrigerated and used as a sweet dip for apple slices.
