Marry Me Salmon is a flavorful and creamy salmon dish featuring a rich sauce made from sun-dried tomatoes, garlic, Italian seasoning, and parmesan cheese. The salmon is seared to perfection and then finished in a luscious coconut milk or Greek yogurt-based sauce with spinach, perfect for serving over brown rice with steamed vegetables for a balanced, elegant meal.

Ingredients

Salmon

  • 4 skinless salmon filets
  • 1 tablespoon Trader Joe's salmon rub
  • 2 tablespoons olive oil

Sauce

  • 4 cloves garlic, minced
  • 1/2 cup julienned sun-dried tomatoes (stored in oil)
  • 1/2 cup diced yellow onion (about 1 yellow onion)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low sodium vegetable broth
  • 1 cup full fat coconut milk (or full fat Greek yogurt*)
  • 2 cups fresh spinach
  • 1/2 cup freshly grated parmesan cheese

For Serving

  • Basil (for topping)
  • Cooked brown rice
  • Steamed vegetables

Instructions

  1. Season the Salmon: Gently rub all sides of the salmon filets with the salmon rub to evenly coat them with flavor.
  2. Sear the Salmon: Heat olive oil in a large pan over medium-high heat. Once hot, sear the salmon for about 5 minutes on each side until cooked through and nicely browned. Remove the salmon from the pan and set aside.
  3. Sauté Aromatics: In the same pan, add minced garlic, sun-dried tomatoes, diced onion, Italian seasoning, red pepper flakes, salt, and black pepper. Sauté for about 2 minutes until fragrant and onions turn translucent.
  4. Add Liquids and Simmer: Pour in the vegetable broth and coconut milk (or Greek yogurt if substituting). Stir to combine and bring the mixture to a gentle simmer.
  5. Finish the Sauce: Reduce the heat to low and stir in the fresh spinach and grated parmesan cheese. Cook until the spinach wilts completely. Then add the seared salmon back to the pan, allowing the flavors to meld.
  6. Serve: Plate the salmon over cooked brown rice with a side of steamed vegetables. Drizzle the creamy sauce over the salmon, and garnish with fresh parmesan and basil leaves for a beautiful presentation and added flavor.

Notes

  • If using full fat Greek yogurt instead of coconut milk, add the yogurt after removing the pan from heat to prevent curdling.
  • For extra heat, increase the amount of red pepper flakes or add freshly ground black pepper to taste.
  • You can substitute brown rice with quinoa or cauliflower rice for different textures or dietary preferences.
  • Ensure not to overcook salmon during searing to maintain a moist and tender texture.
  • Fresh basil adds a nice aromatic touch but can be omitted or replaced with parsley if preferred.
