Ingredients

Salmon and Seasoning

  • 4 skinless salmon filets
  • 1 tablespoon Trader Joe's salmon rub
  • 2 tablespoons olive oil

Sauce

  • 4 cloves garlic, minced
  • 1/2 cup julienned sun-dried tomatoes (stored in oil)
  • 1/2 cup diced yellow onion (about 1 medium onion)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low sodium vegetable broth
  • 1 cup full fat coconut milk (or full fat Greek yogurt - see notes)
  • 2 cups fresh spinach
  • 1/2 cup freshly grated parmesan cheese

To Serve

  • Basil leaves, for topping
  • Cooked brown rice, for serving
  • Steamed vegetables, for serving

Instructions

  1. Season the Salmon: Gently rub the salmon filets on all sides with the Trader Joe's salmon rub to evenly coat them with seasoning.
  2. Sear the Salmon: Heat olive oil in a large pan over medium-high heat. Once hot, place the salmon filets in the pan and sear for about 5 minutes on each side until cooked through and nicely browned. Remove from the pan and set aside.
  3. Sauté Aromatics: Using the same pan, add minced garlic, sun-dried tomatoes, diced onion, Italian seasoning, red pepper flakes, salt, and black pepper. Sauté for approximately 2 minutes until the garlic is fragrant and the onions are translucent.
  4. Prepare the Sauce: Pour in the low sodium vegetable broth and full fat coconut milk (or Greek yogurt substitute). Stir well to combine and bring the mixture to a simmer over medium heat.
  5. Add Spinach and Cheese: Lower the heat to low and stir in the fresh spinach and grated parmesan cheese. Cook until the spinach has wilted and the cheese has melted into the sauce.
  6. Return Salmon to Pan: Place the seared salmon back into the pan, spooning sauce over the filets to coat them well and allow flavors to meld gently for a minute or two.
  7. Serve: Serve the salmon over cooked brown rice with a side of steamed vegetables. Drizzle additional sauce over the dish and garnish with fresh basil leaves and a sprinkle of parmesan cheese.

Notes

  • You may substitute full fat coconut milk with full fat Greek yogurt for a creamier texture; if using yogurt, add it at the end and heat gently to avoid curdling.
  • For best results, use fresh spinach and freshly grated parmesan cheese.
  • Adjust red pepper flakes according to your preferred spice level.
  • This recipe pairs well with brown rice and steamed seasonal vegetables to complete the meal.
