A vibrant and flavorful recipe featuring delicata squash roasted to golden perfection with a spicy-sweet maple gochujang glaze. This vegan and gluten-free dish balances the natural sweetness of squash with the bold umami heat of gochujang and the smooth sweetness of maple syrup, ideal as a savory side or a snack.

Ingredients

Squash and Glaze

  • 1 large delicata squash
  • 1 Tbsp avocado oil
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp pure maple syrup

Instructions

  1. Preheat the Oven: Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare the Sauce: In a large mixing bowl, combine the avocado oil, gochujang, and pure maple syrup. Stir well to create a smooth, spicy-sweet glaze and set it aside.
  3. Prepare the Squash: Slice off both ends of the delicata squash, then cut it lengthwise. Use a spoon to carefully scoop out the seeds. Slice the squash into 1/4 to 1/2 inch thick rings.
  4. Coat the Squash: Place the squash slices into the bowl with the prepared sauce and toss gently until each slice is evenly coated with the glaze.
  5. Arrange on Baking Sheet: Lay the coated squash slices in a single layer on the prepared baking sheet, reserving any remaining sauce for later.
  6. Roast the Squash: Bake in the preheated oven for about 25 minutes, flipping the slices halfway through to ensure even roasting and caramelization. The squash should be tender and golden.
  7. Optional Alternative Air Frying: Alternatively, you can air fry the coated squash at 400°F for about 20 minutes, flipping halfway through. Watch closely to prevent burning.
  8. Serve and Garnish: Once roasted, drizzle the reserved maple gochujang sauce over the squash slices and sprinkle lightly with salt if desired. Serve warm and enjoy this deliciously spicy and sweet dish.

Notes

  • Delicata squash skin is edible and becomes tender when roasted, so there’s no need to peel it.
  • Adjust the amount of gochujang to your preferred spice level; it can be quite spicy.
  • Use parchment paper or a silicone mat to make cleanup easier and avoid squashes sticking to the baking sheet.
  • For a nuttier flavor, you can substitute avocado oil with olive oil or sesame oil.
  • This dish pairs well with steamed grains or as a side to grilled tofu or tempeh for a complete vegan meal.
