Lemon Puppy Chow is a delightful twist on the classic snack mix, combining crunchy Chex cereal coated in a luscious white chocolate lemon glaze and dusted with powdered sugar for a zesty, sweet treat perfect for sharing.

Ingredients

Dry Ingredients

  • 8 cups rice or corn Chex cereal
  • 1½ cups powdered sugar

Wet Ingredients

  • ¼ cup butter
  • 12 oz white baking chips
  • 2 Tablespoons lemon juice
  • Zest from 1 lemon

Instructions

  1. Melt Butter and White Chocolate: In a large microwave-safe bowl, melt ¼ cup of butter. Stir in 12 oz white baking chips and microwave in 20 second bursts, stirring between each, until the mixture is smooth and fully melted.
  2. Add Lemon Flavor: Mix in 2 tablespoons lemon juice and the zest from 1 lemon. The mixture may seize slightly but should remain workable to coat the cereal. If it becomes too thick, add a splash of cream to loosen it to a smooth consistency.
  3. Coat the Cereal: Gently fold in 8 cups of rice or corn Chex cereal, ensuring each piece is evenly coated with the lemony white chocolate mixture.
  4. Sugar Coating: Transfer the coated cereal to a gallon-size zipper bag. Add 1½ cups powdered sugar, seal tightly, and shake vigorously until every piece is generously coated.
  5. Cool and Set: Spread the coated cereal on a baking sheet or parchment paper in a single layer. Allow it to cool completely and set before storing.
  6. Store Properly: Once fully set, place the Lemon Puppy Chow in an airtight container to maintain freshness.

Notes

  • Use either rice or corn Chex cereal based on preference or availability.
  • The lemon juice may cause the white chocolate mixture to seize; adding a splash of cream helps smooth the texture.
  • Ensure the mixture is cool and set before storing to avoid clumping.
  • This snack keeps well in an airtight container for up to one week.
  • For extra zest, add more lemon zest or a few drops of lemon extract.
