Lemon Posset is a classic British dessert that features a creamy, tangy lemon-flavored custard made with just three simple ingredients. This no-bake treat is silky smooth and sets in the refrigerator, making it an elegant and refreshing dessert perfect for any occasion.

Ingredients

Ingredients

  • 2 cups heavy whipping cream
  • 2/3 cup granulated sugar
  • 5 Tbsp lemon juice (from about 3 lemons)
  • Lemon slice or berries for serving (optional)

Instructions

  1. Boil: In a small saucepan, combine the heavy whipping cream and granulated sugar. Heat over medium, stirring occasionally to dissolve the sugar completely. Bring the mixture to a boil, then reduce the heat to maintain a medium boil and cook for 5 minutes, ensuring it does not boil over.
  2. Add lemon: Remove the pan from heat and stir in the fresh lemon juice. Let the mixture cool for 15 minutes to allow flavors to meld. Then strain the mixture through a fine mesh sieve into a large measuring cup with a pouring lip, removing any lemon pulp or solids.
  3. Fill: Divide the strained mixture evenly into 6 ramekins or alternatively fill 10-12 hollowed-out lemon halves about 3/4 full, which helps the posset set properly and looks visually appealing when served.
  4. Refrigerate: Chill the posset in the refrigerator for at least 2 hours or until fully set and firm to the touch. Once set, garnish with whipped cream, lemon slices, or fresh berries as desired before serving.

Notes

  • Use fresh lemons for the best flavor and sufficient juice extraction.
  • Straining the mixture ensures a smooth, silky texture by removing pulp or seeds.
  • Ramekins are ideal for individual servings but lemon halves add a decorative touch.
  • Heavy cream is essential for the rich and creamy texture; do not substitute with lighter creams.
  • This dessert can be made a day ahead and refrigerated, making it perfect for entertaining.
