Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup unflavored whey protein powder
  • 3 tbsp granular sweetener
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum

Wet Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 2 tsp lemon zest
  • 1/2 tsp lemon extract (or vanilla extract)
  • 2 to 4 tbsp lemon juice (or almond milk or water)
  • Butter or oil for the pan

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together almond flour, protein powder, sweetener, baking powder, and xanthan gum until well combined and free of clumps.
  2. Blend Wet Ingredients: Combine cottage cheese and eggs in a blender and blend until smooth. Add lemon zest and lemon or vanilla extract, blending briefly to mix.
  3. Combine Batter: Add the dry ingredient mixture to the blender and blend until thoroughly combined. Add lemon juice, almond milk, or water gradually to thin the batter to a scoopable consistency.
  4. Preheat Cooking Surface: Heat a griddle or large non-stick skillet over medium to medium-low heat and brush lightly with butter or oil to prevent sticking.
  5. Cook Pancakes (First Side): Pour about 3 tablespoons of batter onto the griddle or skillet, spreading into 3 to 4 inch circles. Cook for 2 to 4 minutes until bubbles form on the surface and the edges look set and dry.
  6. Flip and Cook (Second Side): Carefully flip the pancakes and cook for another 2 to 4 minutes until golden brown on the other side. Repeat with remaining batter, adding butter or oil as needed.

Notes

  • Use a blender for the smoothest batter consistency and easiest mixing.
  • Adjust the amount of lemon juice or liquid depending on desired batter thickness.
  • Cook pancakes on medium-low heat to avoid burning and ensure even cooking.
  • These pancakes are best served warm and can be enjoyed with fresh fruit or sugar-free syrup.
  • Substitute lemon extract with vanilla extract for a different flavor profile.
