This Keto Cheesecake is a creamy, low-carb dessert perfect for those following a ketogenic lifestyle. Made with an almond flour crust and sweetened with a keto-friendly sweetener, it offers a rich, satisfying treat without the sugar spike. The cheesecake features a smooth, tangy filling made from cream cheese, sour cream, and vanilla, baked to perfection for a creamy, velvety texture.

Ingredients

Crust

  • 1.5 cups almond flour
  • 4 tbsp butter

Filling

  • 16 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust and filling.
  2. Prepare crust: Combine the almond flour and melted butter in a food processor and process until the mixture is well combined and crumbly. Press this mixture firmly into the bottom and up the sides of an 8-inch springform pan, creating an even crust layer. Bake the crust for 10 minutes until it becomes slightly golden brown.
  3. Make filling: While the crust bakes, process the cream cheese in the food processor until smooth and creamy. Add in the sour cream, eggs, vanilla extract, and sweetener. Continue processing until all ingredients are well incorporated, scraping down the sides of the processor bowl as needed to ensure an even mixture.
  4. Assemble the cheesecake: Once the crust has baked for 10 minutes, remove it from the oven and pour the cream cheese filling evenly over the crust layer.
  5. Bake cheesecake: Return the springform pan to the oven and bake for 50 to 60 minutes. The cheesecake is done when the edges are set and the center no longer jiggles when gently shaken.
  6. Cool and chill: Allow the cheesecake to cool to room temperature on a wire rack. After cooling, refrigerate the cheesecake for 3 to 4 hours to set fully before serving.

Notes

  • Joy Filled Eats Sweetener can be substituted with erythritol, monk fruit sweetener, or a keto-friendly blend.
  • Make sure cream cheese is softened to room temperature for easier blending.
  • Use an 8-inch springform pan for best results to easily remove the cheesecake after baking.
  • Chilling the cheesecake sufficiently is key to achieving the right texture and firmness.
