This Chicken Kebab recipe delivers tender, flavorful kebabs using boneless, skinless chicken thighs marinated in a blend of yogurt and spices. Perfect for grilling, baking, or barbecuing, these kebabs are juicy, aromatic, and easy to prepare—ideal for a quick weeknight dinner or a weekend cookout.

Ingredients

Chicken

  • 1 kg Chicken thighs (Boneless and skinless)

Marinade

  • 150 g Natural yoghurt
  • 2 tsp Paprika
  • 2 tsp Ground cumin
  • 0.5 tsp Cinnamon
  • 0.5 tsp Dried chilli flakes
  • 2 tsp Garlic granules
  • 1 Lemon (Zest and juice)
  • Salt and freshly ground pepper, to taste

Instructions

  1. Slice the chicken: Cut the chicken thighs lengthwise into thin strips to ensure even cooking and better absorption of the marinade.
  2. Make the marinade: In a large bowl, combine the natural yoghurt, paprika, ground cumin, cinnamon, dried chilli flakes, garlic granules, lemon zest, lemon juice, salt, and freshly ground pepper. Mix well until all ingredients are thoroughly incorporated.
  3. Combine: Add the sliced chicken thighs to the marinade and toss to coat evenly. Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavors to infuse the meat, or for best results, marinate overnight.
  4. Time to cook: Thread the marinated chicken pieces onto skewers, spacing them slightly apart. Cook the kebabs on a preheated grill, in the oven at 200°C (392°F), or over a BBQ for about 20 minutes, turning occasionally, until the chicken is golden on the outside and cooked through.

Notes

  • For even more flavor, marinate the chicken overnight.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Serve with flatbreads, fresh salads, or a side of rice for a complete meal.
  • You can adjust the chili flakes to your preferred heat level.
  • Use an instant-read thermometer to ensure chicken reaches an internal temperature of 75°C (165°F) for safety.
