These Jam Puff Pastry Tarts are delicate, flaky pastries filled with your favorite jam, topped with sliced almonds, and optionally drizzled with a sweet glaze. Perfect as a delightful snack or dessert, they combine buttery puff pastry with the fruity sweetness of jam for a simple yet elegant treat.

Ingredients

Puff Pastry and Filling

  • 350 grams ready-rolled puff pastry (12 oz.)
  • 1 egg
  • 1 tablespoon water
  • 10 tablespoons jam (any flavor)
  • ¼ cup sliced almonds

Glaze

  • ½ cup icing sugar (powdered/confectioner's sugar)
  • 1-2 tablespoons lemon juice or water (or a mixture of both)

Instructions

  1. Preheat Oven: Place the oven rack in the middle position and preheat the oven to 200°C (390°F) to ensure even baking and perfect puffiness.
  2. Prepare Baking Trays: Line two large baking trays with baking paper. Use a half sheet tray approximately 40cm x 28cm (16" x 11"). If using smaller trays, divide the pastry accordingly.
  3. Make Egg Wash: Crack open the egg into a bowl, add 1 tablespoon of water, and beat until thoroughly mixed. Set this aside to brush over the pastry for a golden finish.
  4. Cut Pastry Squares: Unroll the puff pastry and, using a ruler and a knife or bench scraper, cut out 10cm x 10cm (4" x 4") squares to form 10 pieces.
  5. Shape Pastries: Fold each square gently from one corner to the other to create a triangle. Measure a 1.5cm border along the long side and carefully cut upward from the long side to the corner, leaving the corner intact.
  6. Prick Center and Brush: Open the fold to lay flat, prick the center of the square with a fork to prevent over-puffing, and brush the entire top with the beaten egg wash.
  7. Add Jam and Fold: Spoon about 1 tablespoon of jam in the center. Fold the left cut corner over to the opposite side and tuck under the right corner while gently pulling it left. Press down lightly and brush the edges again with egg wash.
  8. Top with Almonds and Bake: Sprinkle sliced almonds over the jam and pastry edges. Bake in the preheated oven for 20 to 25 minutes or until the pastry is puffed and golden brown.
  9. Cool and Prepare Glaze: Remove the tarts from the oven and allow them to cool on racks. In a small bowl, mix icing sugar with lemon juice and water to form a smooth glaze.
  10. Glaze and Serve: Once the tarts have cooled, drizzle the glaze over them evenly. This step is optional but adds a lovely finish. Serve and enjoy your delicious jam puff pastry tarts.

Notes

  • You can use any flavor of jam you prefer, such as raspberry, strawberry, or apricot.
  • The glaze is optional but adds a nice tangy sweetness to balance the jam.
  • Be careful while folding to maintain the pastry layers for better puffiness.
  • Almond slices can be substituted with other nuts or omitted if desired.
  • Store leftovers in an airtight container at room temperature for up to 2 days.
