Ingredients

Chicken and Seasonings

  • 3 pounds thinly sliced chicken breast
  • 1 tablespoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons chili powder
  • 2 teaspoons red pepper flakes
  • 4 teaspoons garlic salt
  • ½ cup water

Vegetables

  • 2 green bell peppers, seeded and sliced
  • 2 red bell peppers, seeded and sliced
  • 2 yellow bell peppers, seeded and sliced
  • 1 white onion, thinly sliced

To Serve

  • Warm tortillas
  • Toppings of your choice such as shredded cheese, sour cream, diced tomatoes, or guacamole

Instructions

  1. Combine Ingredients: Add the thinly sliced chicken breast, cumin, paprika, chili powder, red pepper flakes, garlic salt, and water into the pot of the Instant Pot. Stir the mixture well to evenly coat the chicken with the spices.
  2. Add Vegetables: Add the sliced green, red, and yellow bell peppers along with the thinly sliced onion to the chicken mixture. Stir gently to combine all ingredients.
  3. Seal the Instant Pot: Place the lid onto the Instant Pot, ensuring the valve is set to the 'Sealed' position to prepare for pressure cooking.
  4. Pressure Cook: Cook on high pressure for 7 minutes. Once the cooking time is complete, carefully perform a quick release to release the steam and pressure from the pot.
  5. Serve: Remove the lid, give the fajita filling a gentle stir, then spoon the chicken and vegetable mixture into warm tortillas. Garnish with your preferred toppings like shredded cheese, sour cream, diced tomatoes, or guacamole.

Notes

  • For a milder flavor, reduce or omit the red pepper flakes.
  • You can also add sliced jalapeños if you prefer extra heat.
  • If you don't have an Instant Pot, this recipe can be adapted to stovetop cooking by sautéing the ingredients and simmering until cooked through.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Use fresh tortillas warmed on a skillet or microwave for best results.
