Ingredients

Shrimp and Seasoning

  • 32 jumbo shrimp, peeled and deveined (18 ounces total)
  • 1/4 teaspoon Kosher salt
  • Freshly ground black pepper, to taste
  • 1 tablespoon canola oil (divided)

Sauce

  • 2 large oranges
  • 1 tablespoon honey
  • 2 tablespoons reduced or gluten-free sodium soy sauce
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon cornstarch

Aromatics and Garnish

  • 6 cloves garlic, minced
  • 1 tablespoon finely minced fresh ginger
  • 2 scallions (whites thinly sliced, greens cut into 2-inch lengths)
  • 1/4 to 1/2 teaspoon red pepper flakes

For Serving

  • Cooked rice

Instructions

  1. Prepare Orange Zest and Juice: Finely grate the zest from 1 orange, yielding about 2 teaspoons. Juice both oranges into a bowl, ensuring you collect approximately 3/4 cup of juice.
  2. Make the Sauce Base: Whisk the orange juice with honey, soy sauce, rice vinegar, and 1 tablespoon of water until combined.
  3. Thicken the Sauce: In a small bowl, mix the cornstarch with 1 tablespoon of the orange-soy mixture to form a smooth paste, then stir this paste back into the main orange-soy sauce bowl.
  4. Season the Shrimp: Pat the shrimp dry thoroughly with paper towels, then season both sides evenly with Kosher salt and freshly ground black pepper.
  5. Cook Half the Shrimp: Heat 1 teaspoon of canola oil in the largest skillet or wok over medium-high heat until shimmering and almost smoking. Arrange half of the shrimp in a single layer and cook until the underside turns bright pink, about 1 to 1½ minutes. Flip and cook another 1 minute. Remove shrimp to a plate.
  6. Cook Remaining Shrimp: Repeat the cooking process with another teaspoon of canola oil and the remaining shrimp. Set aside once cooked.
  7. Sauté Aromatics: Add the final teaspoon of oil to the skillet. Add minced garlic, ginger, scallion whites, and red pepper flakes. Cook, stirring, until fragrant, about 30 seconds to 1 minute.
  8. Thicken Sauce in Skillet: Pour in the orange-soy liquid and add the orange zest. Stir and cook until the sauce thickens slightly, about 1 to 2 minutes.
  9. Combine Shrimp and Sauce: Return all cooked shrimp to the skillet, add the scallion greens, and toss thoroughly to coat the shrimp with the sauce glaze.
  10. Serve: Divide the honey garlic shrimp evenly among 4 bowls and serve immediately with cooked rice.

Notes

  • Use jumbo shrimp for best texture and flavor, but medium shrimp can be substituted if needed.
  • Drying the shrimp before seasoning is crucial for achieving a good sear.
  • Adjust red pepper flakes to control the level of heat from mild to moderately spicy.
  • The cornstarch slurry ensures that the sauce thickens perfectly—don't skip this step for the best glaze.
  • Serve with steamed jasmine or basmati rice for a complete and satisfying meal.
