Ingredients

Dough

  • 1 1/2 cups warm water, 105 to 110 degrees F
  • 2 tablespoons sugar or honey
  • 2 tablespoons olive oil
  • 1 tablespoon instant yeast
  • 1 large egg
  • 1 1/2 teaspoons table salt
  • 4 cups all-purpose or bread flour

Egg Wash and Garnish

  • 1 large egg
  • 1 tablespoon water
  • Sesame seeds, optional

Instructions

  1. Combine Ingredients: In the bowl of a stand mixer fitted with a dough hook or in a large bowl by hand, combine the warm water, sugar, olive oil, instant yeast, 1 large egg, salt, and 2 cups of the flour.
  2. Knead the Dough: Start mixing on low speed, gradually adding the remaining flour until the dough forms a soft ball that pulls away from the bowl. Knead for 5 minutes, adding small amounts of flour if the dough clings to the bowl. The dough should be soft and slightly tacky but not sticky.
  3. First Rise: Cover the bowl and let the dough rise in a warm, draft-free place until doubled in size, about 45 to 60 minutes.
  4. Prepare Baking Sheets: Line two half-sheet pans with parchment paper and lightly grease with cooking spray.
  5. Shape the Dough: Lightly punch down the dough and turn it onto a greased countertop. Divide into 10 equal parts (about 4.5 to 4.7 ounces each). Roll each piece into a ball and place five on each prepared pan, spacing them several inches apart.
  6. Form Discs: Lightly press each dough ball into a disc about 1/2-inch thick and 2 to 2 1/2 inches wide. If the dough springs back, let it rest 5 to 10 minutes and press again.
  7. Second Rise: Cover the discs and let rise in a warm, draft-free place until noticeably puffy, about 45 minutes.
  8. Preheat Oven: Preheat the oven to 375°F (190°C).
  9. Prepare Egg Wash: Whisk together 1 egg and 1 tablespoon water. Gently brush the top and sides of the risen buns with the egg wash, being careful not to deflate them.
  10. Add Toppings: Sprinkle sesame seeds on top, if desired.
  11. Bake: Bake the buns for 18 minutes, or until golden brown on top. Allow to cool slightly before serving.

Notes

  • Use instant yeast for convenience; if using active dry yeast, proof it in warm water before adding.
  • For an egg-free version, substitute the egg in the dough with applesauce or a commercial egg replacer.
  • Bread flour will produce slightly chewier buns, while all-purpose flour creates softer buns.
  • Ensure water temperature is between 105°F and 110°F to activate the yeast properly.
  • If dough is too sticky during kneading, add flour a tablespoon at a time.
  • Resting dough after shaping discs helps gluten relax for easier shaping.
