Ingredients

Dough Ingredients

  • 1 teaspoon active dry or instant yeast
  • 1 teaspoon granulated sugar
  • 3/4 cup (180ml) warm water, (between 100-110°F, 38-43°C)
  • 2 cups (250g) all-purpose flour or bread flour (spooned & leveled), plus more for hands and surface
  • 1 tablespoon (15ml) olive oil, plus 2 teaspoons for brushing the dough
  • 1 teaspoon salt
  • Optional: 1 teaspoon garlic powder or 1 clove minced garlic and/or 1 teaspoon Italian seasoning

Toppings (suggested)

  • Your choice of pizza sauce
  • Shredded mozzarella cheese
  • Additional toppings such as pepperoni, vegetables, olives, etc.

Instructions

  1. Activate the yeast: Whisk the yeast, sugar, and warm water together in the bowl of your stand mixer. Loosely cover and let it sit for 5–10 minutes until it becomes foamy and frothy on top, indicating the yeast is active.
  2. Mix the dough: Add the flour, olive oil, salt, and optional garlic or Italian seasoning to the yeast mixture. Mix on low speed with a dough hook until combined, about 2 minutes, forming a thick, soft, slightly sticky dough that pulls away from the sides of the bowl. Add more flour by tablespoons only if the dough is too sticky to handle.
  3. Knead the dough: Continue kneading in the stand mixer with the dough hook for an additional 6-8 minutes, or knead by hand on a lightly floured surface for 6-8 minutes. The dough should remain soft but elastic. Use the windowpane test to confirm adequate kneading.
  4. First rise: Place the dough in a greased bowl, cover with plastic wrap, foil, or a clean towel, and let it rest for 45 minutes at room temperature, until slightly risen. The dough can also be refrigerated for up to 2 days for a slower fermentation.
  5. Prepare toppings: While the dough rises, get your desired toppings ready.
  6. Preheat oven: Heat your oven to 475°F (246°C) to ensure it is very hot for baking the pizza.
  7. Shape the dough: Punch down the risen dough to release air, divide it into two pieces. On a floured surface, stretch or roll each piece into approximately 1/4 inch thickness. Transfer the dough to a parchment-lined baking sheet, silicone mat, or pizza stone.
  8. Prepare flatbread bases: Prick the surface of the dough with your fingers or a fork to prevent bubbles. Brush each with 1 teaspoon olive oil.
  9. Add toppings: Spread pizza sauce, cheese, and your chosen toppings evenly over each flatbread.
  10. Bake the pizzas: Place the pizzas in the preheated oven and bake for 15–20 minutes until the crust is golden and crisp, and the toppings are browned and bubbly.
  11. Serve: Remove from oven, slice, and serve warm.
  12. Store leftovers: Cover and store any leftover pizza in the refrigerator for up to one week.

Notes

  • Using warm water within 100-110°F optimizes yeast activation but avoid hotter water which can kill the yeast.
  • The dough can be refrigerated for up to 2 days after rising to develop more flavor; let it come to room temperature before shaping.
  • Adjust flour amount carefully during mixing and kneading to keep dough soft yet workable.
  • Use a pizza stone if available for a crispier crust, preheating it in the oven.
  • Customize toppings to your preference—vegetarian, meat lovers, or simple cheese.
  • For a crispier base, pre-bake the dough for 5 minutes before adding toppings.
  • Allow dough to rest and rise fully for the lightest texture.
