Delicious and nutritious high protein egg bites featuring a creamy blend of cottage cheese, sun-dried tomatoes, fresh spinach, and aromatic basil, topped with crumbled feta and black pepper. These savory bites are perfect for a quick breakfast or snack and are baked to a light and fluffy texture.

Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon fine sea salt

Add-ins

  • 1 (8-ounce) jar sun-dried tomatoes in oil, drained and roughly chopped
  • 1 large handful fresh baby spinach, roughly chopped
  • 1/3 cup (0.25 ounces) julienned fresh basil leaves

Topping

  • Crumbled feta, for topping
  • Black pepper, for topping

Instructions

  1. Prep oven and baking pan. Preheat your oven to 350°F (175°C). Thoroughly mist a 12-cup muffin pan with cooking spray to prevent sticking and ensure easy removal of the egg bites.
  2. Blend the base. In a blender, combine the 8 large eggs, 1 cup of cottage cheese, and 1/2 teaspoon fine sea salt. Pulse a few times until the mixture is smooth and creamy to provide a rich and airy texture.
  3. Add vegetables and herbs. Transfer the blended egg mixture to a bowl and stir in the roughly chopped sun-dried tomatoes, fresh baby spinach, and julienned fresh basil leaves by hand until everything is evenly combined.
  4. Fill muffin cups. Divide the mixture evenly among the 12 muffin cups, using a cookie scoop or spoon to help with portioning. Sprinkle each cup with crumbled feta cheese and a twist of black pepper for added flavor and a savory finish.
  5. Bake egg bites. Place the muffin pan in the preheated oven and bake for 20-22 minutes, or until the egg bites are puffed up and slightly firm to the touch in the center. Once done, carefully transfer the pan to a wire rack and let the bites cool for at least 5 minutes; they will deflate slightly as they cool.
  6. Serve and store. Enjoy the egg bites warm immediately. Store any leftovers in a sealed container in the refrigerator for up to 5 days to maintain freshness.

Notes

  • Make sure to thoroughly spray the muffin pan to prevent sticking.
  • The egg bites will puff up during baking but will deflate slightly as they cool—this is normal.
  • Feel free to customize by adding other fresh herbs or vegetables.
  • Leftovers can be reheated in the microwave for about 30 seconds before serving.
  • These egg bites are great for meal prep and quick breakfasts on the go.
