This classic roast beef recipe delivers a tender, flavorful meal perfect for family dinners. The beef is infused with a fragrant garlic and herb mixture, then oven-roasted to medium or medium-well perfection. Resting the meat after roasting ensures juicy, delicious slices every time.

Ingredients

Beef

  • 4 pounds round roast (fat trimmed)

Herb and Garlic Rub

  • ¼ cup olive oil
  • 6 cloves garlic (chopped)
  • 4 cloves garlic (cut into slivers)
  • 1 tablespoon fresh basil (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Bring Roast to Room Temperature: Take the roast out of the fridge at least 1 hour before cooking, but no longer than 2 hours, to allow even cooking.
  2. Preheat the Oven: Set the oven to 450°F to prepare for searing the roast and sealing in juices.
  3. Prepare Herb-Garlic Mixture: In a small bowl, combine olive oil, chopped garlic, fresh basil, rosemary, dried thyme, salt, and black pepper to create a flavorful paste.
  4. Insert Garlic Slivers: Carefully cut slits evenly around the roast using a sharp knife, then insert the garlic slivers into these slits for enhanced garlic flavor throughout the meat.
  5. Apply Herb Rub: Rub the garlic and herb mixture thoroughly all over the entire surface of the roast to season it evenly.
  6. Roast the Beef: Place the seasoned roast on a rack inside a roasting pan. Roast uncovered in the preheated oven at 450°F for 15 minutes. Then reduce heat to 325°F and continue roasting for 1 hour and 45 minutes for medium doneness, or 2 hours for medium-well.
  7. Rest the Meat: Remove the roast from the oven, transfer it to a cutting board or serving plate, and let it rest for 15 to 30 minutes. This resting period allows juices to redistribute for a moist and tender roast.

Notes

  • Letting the roast rest before cooking ensures even cooking throughout.
  • Using a meat thermometer can help verify doneness: 135°F for medium and 150°F for medium-well.
  • Resting after roasting is crucial to keep the meat juicy and tender.
  • Trim excess fat for a leaner roast but leaving some fat can enhance flavor.
